The key to ramen eggs (known in Japanese as ajitsuke tamago 味付け卵) is that they aren't just flavoured by their marinade. The salty and sweet marinade actually acts as a cure to firm the whites and yolks, and give the yolks a savoury and jammy taste and consistency, which is a much better texture for ramen. Two days curing is about right for curing ramen eggs, but you can go more or less depending on the levels of salt and sugar in the liquid.
Even if you're not making ramen eggs, this video has some tips for how to get your regular boiled eggs perfect every time.

Same, I didn't know about this, I'd never heard of this. I already can make perfect yolks, but always ended up with some sacrificial eggs that just break no matter what...this saves me from that AND makes the air pocket go away? Amazing.

Wife divorced me. Took the car, the house, the kids, all my money and left me with child support payments that are two-thirds of my income. @@nein7594 yeah that's fair that in the US atleast, soft boiled isn't considered food safe because of the eggs that are available in the country. even so, boiled eggs don't have to be dry as hell to be safe. stopping a little short of fully boiled (so between a 'medium' boil and hard) is safe but still actually appetizing.

The egg trick demonstrate din this video should really be common knowledge considering how effective it is at mitigating two of the biggest headaches in boiling eggs, yet even after years of home cooking, this is the first time I'm hearing about it.

@Samwise in my case (who doesn't like kimchi at all), I sometimes cured my boiled egg with a mix of Worcestershire sauce, lime juice, bit of sugar, bit of salt, and mirin. Some other time, I just dip it in soy sauce and that's it...

I found a recipe online it called for mushroom soy sauce, regular soy sauce mirin, red pepper flakes, and garlic I ended up slightly under cooking the eggs making them runner than I wanted but they were amazing

So glad I stumbled on your channel. I spent 6 years living in Japan and absolutely fell in love with the food there. The way you described the perfect bowl of ramen is spot on! Now that I'm back stateside I miss having that perfect bowl of ramen and have yet to find a place that makes it with the passion and accuracy that you describe, even with just the egg.

Thank you so much for this. Thanks to this vid, I was able to make damn near perfect eggs for my first exceptional ramen bowl. Didn’t expect curing the egg to make that much of a difference, but it definitely does! I now understand the process better. It makes much more sense to use the braising liquid since you’re already doing that step anyway. Again, thank you! I still have much to learn and more holes to poke.

I have an egg steamer. Perfect eggs every time. It even has a special needle to make the holes. You can adjust the water to how many eggs and how you want them, soft, medium or hard.

The Chinese have a version called tea eggs. I used to buy 2 for lunch every so often. soaked in Chinese tea and five spice powders I believe. that would be a good video too.

Tea eggs are nice and also easy to make. They are WAY hard-boiled though. Past hard boiled. Long ago I worked in a Chinese restaurant that had all Chinese customers. They had a dish of red-cooked meat, it had something like gravy, but of course soy-sauce flavor. They would put a bunch of boiled eggs in that, which became "gravy eggs", turning entirely brown and shiny, and I guess were red-cooked eggs? They were VERY popular. Nobody had ever heard of real RAMEN at this time.

Well... maybe you can find a good all-around husband and encourage him to watch all these relevant videos... make sure there's some nice Japanese kitchen ware, a beautiful and very sharp knife (guys love that) and you know, Mirin and Soy Sauce and so on just happen to be stocked in your kitchen.

I just boiled a dozen eggs and had to eat 8 of them. Now I'm watching your video. I'll be back after the next batch finishes. Edit 1: Ok, so following that failure of a dozen eggs, I boiled 6 more using your hole-poking technique with the hole in the bottom. Wow, it was night and day peeling them. I've steeped a thousand poultry embryos in my time. And this breakthrough has me in awe. The only other possible thing that could have affected it was that boiling only 6 instead of 12 caused the water to remain hotter. I'm going to boil 12 more, using the hole-poking technique and see if I get the same results. (I know what you're thinking.... But WHAT ARE YOU GOING TO DO WITH THAT MANY EGGS!.... well, I'm 8 eggs down in the past 45 minutes and the flatulence has already begun) Edit 2: Ok, I'm dumb and too spontaneous. I literally set out to boil a dozen more eggs to find out if the eggs cooling the water was the reason that they were easier to peel than the 6 eggs, and at the last minute I was like "Hmmm, what if I put these eggs in the water prior to boiling it so that they aren't 'refrigerator cold' and cool the water". So I warmed up the eggs, defeating the purpose of the dozen-eggs-experiment. Now I'm going to have to do ANOTHER dozen eggs........... I'm not actually upset because it seems like a good idea instead of waiting for them to raise to room temperature on their own. Well, time to do another dozen eggs..... Edit 3 coming soon.......

note that some of that deep color is from the egg itself - free range eggs where the chickens have a more normal life so the eggs will be richer. ofcourse, they also cost more so for some the extra cost can put them out of reach(varies, and in some regions could be quite expensive comparitively).
