Is it worth buying this game without a team or a server? Or would that be just a bunch of people running randomly through fields with no coordination, and hoping to do the best as a solo soldier like you would do it with battlefield quickplay?

Pretty much. This gameplay is from organized games while pub games aren't like that. Occasionally though some daring officer over the VOIP would manage to form a line among randoms in a pub server and its entertaining. There's also naval gameplay as well. You could always refund the game if you don't like it, that's an option.
