Cancelling the ult is just pressing the ult keys while it's active, and along with building up your talent trees for more energy and stuff you can look up what they're doing in movement guides
Because her ult got a little change, before the change that's a auto attack and very fast, after change you need to press right click to attack, or wait for a little and then it's auto attack for you
I think it is more for keeping you on your toes and being fluid for movement in and out of combat, when it becomes a habit from more practice then dodging in combat will feel more normal to you
