Jamaican make that cassava thing to it's called bammy or bammi we remove the starch from the cassava too, it look easier in Ghana jamaican put it in a cloth and rings out the starch

The processing of Gari & Yake Yake are similar as I see it: Whiles Gari is more fermentated, Yake Yake is not; Whiles Gari is the end product of roasting the product from the Cassava, Yake Yake is steamed. I think because Yake Yake has less starch, it is more healthier. I would like to see Yake Yake on a commercial basis as Gari is. Are there ingenious engineers in Ghana to make this happen? The processing is too laborious & time consuming, yet it is a healthy product.

Madam, its smoother than gari wae. This is finer in texture than gari. I've tasted it twice and I can attest. Its 100% carbo like gari but gari is roasted with rough coarses like little pebbles whiles this is sieved before cooking. So the fine and rough textuers makes the tastes different but both are starchy.

We have this one same food in the Western Region,The Nzema call it Ngbokpol3 or Atuku.The method of making is 100% the same.From Axim to Elibu to Half Assinie through AGYEZA,EZILIBU, BONYERE and every village and town in Jomoro District,you can eat NGBOKPOL3 or ATUKU(yake yake).It is more Nzema food than Ewe food

So she makes it all from scratch, and occasionally makes a meal to sell, or was that just for you? Maybe it would be easier for her to sell in bulk, if there were some vendors that prepped whole meals from (among others) yake yake, sort of like a fast-food venue. Maybe already a thing, and a saturated market, but I figured I'd throw it out there in case it wasn't. There's a similar process we do in Jamaica, called " bammy". But I saw my granny removed the starch, by ringing it in a white cloth. Then put the it's ( not the liquid)put to dry, then toast (?)in a pot . Oh the liquid was used as starch to iron clothes. Those seams were straighter than an arrow. So sharp,they could slice your finger.😁😁

Auntie Margaret has sharp business acumen. She prepares and sells Yake Yake because she wanted to offer a different food from those selling banku. Auntie Margaret is such a dedicated entrepreneur, as the preparation of Yake Yake is so very labor intensive. Thank you Jamine, for showcasing this very dedicated business woman.

It is labor intensive but the people who cook don't see it that way. I think when we acustom our lifestyle to microwaves and stir fries, it takes away the joy of cooking. African cooking style is the true definition of "Joy of cooking". Africans have a great relationship with food that is why obesity is not a big big issue in our communities. We cook with care and eat with respect. Lastly we eat for nutrition not for satisfaction.

What you must understand is that the 'fast foods' you buy in the fancy stores have a "labour intensive" aspect to them as well. Someone (the processing company) only took care of that for you. She's having to do a lot of that herself. Eg. Melcom and others now have spring rolls in packs. U buy it uncooked and just go and fry. Someone has done most of the work for you. More processing needed in these parts? Maybe.

I am sorry but that is the narrative you are supposed to believe so you will forsake your culture and identity. Have you ever made bread, wine, cheese by hand? They are all labour intensive. The first of this list bread is something many europeans had as a daily staple. But rather they celebrate even revere how labour intensive it is. On the other hand afɔtɔ (ɔtɔ), mpɔtɔmpɔtɔ, kontomire with red oil or kwalulu (aboboi) with red oil and pepper are some very simple alternatives along with gari soakings. Sometimes the labour is worth it for the results. We need to stop the negative thinking and value what is ours !

I agree that most fresh cooked foods have some element of labour involved but I wish we as a people had the resources and support to come up with certain aids and mechanisms to make things a bit easier for us. How Long can this hardworking woman continue to make a livelihood off this? I just feel for her that’s all.

We have something similar in Côte d'Ivoire,especially in my tribe which is not that far from the Ghana border, we are actually Akan.it is called atukpu.we have 2 types depending of the locations.one really thick n the other one quite thin ( the type i prefer).it's also almost the same process to make attieke

It's interesting to note that this cassava meal is very similar to bammy (a cassava flat bread) in Jamaica,major difference, this one is steamed whilst balmy is not steamed, it is done in metal rings on a hot metal or surface or in a pot. Very interesting. 🇯🇲

Jas you looked relaxed and not in a hurry. Your pace of questioning was Just right. Yake Yake is the bomb. All natural and fresh, no preservatives. Steamed food retains all the nutrients in it, as compared to boiled ones.

Have u noticed some of the food vendors dont open up fully , for instance one of ur video on ga kenkey , those women were not friendly at all. I suspected they ferment the dough with yeast and that compromise their judgement

No it can't taste like gari because gari is fermented. This is made in Jamaica 🇯🇲Trelawny Albert Town. We call bammy. We also have the word YAKE YAKE. MANY JAMAICANS ARE FROM THE VOLTA REGION OF GHANA.

They call this atukpu in Côte d'Ivoire very nice dish close to atieke. I also saw something similar in Jamaican store in the USA 🇺🇸 21:41 looks delicious
