Rasam Inspired Tomato & Pepper Soup
3 tomatoes
2 red bell pepper
4 cloves garlic
1 onion
1 stock cube
1 teaspoon vinegar (apple cider vinegar)
Salt & pepper to taste
1/4th tsp Rasam Powder
Fresh cream to finish
Garnish with Parmesan, cream and herbs
Process:
- Roast the veggies either in the oven or on an open flame till nicely charred
- Plate them in a covered bowl for 10 minutes before peeling the skin - chop the veggies (de-seed the tomato)
- Saute onion chunks in oil
- Once translucent- add garlic and sauté
- In go the peeled and chopped veggies
- Season with salt & pepper
- Add the rasam powder and vinegar and mix well
- Add a splash of water along with a stock cube and mix well
- Let it cool down before blending to a smooth soup - you can use a hand blender as well
- Warm up the soup - take it off the heat and finish with fresh cream
- Serve, garnish and enjoy!
