Rasam Vada Recipe
#### Rasam Powder Ingredients
- Urad dal: 1/2 tsp
- Chana dal: 1/2 tsp
- Toor dal: 1 tbsp
- Coriander seeds: 1 tbsp
- Cumin seeds: 1/2 tsp
- Black peppercorns: 1/2 tsp
- Dry red chilies: 5
- Curry leaves: 2 sticks
#### Method for Rasam Powder
1. Heat a pan and sauté all the ingredients for 2-3 minutes.
2. Allow the mixture to cool and then grind it into a fine powder.
3. Your homemade Rasam powder is ready.
#### Other Ingredients for Rasam
- Tamarind water: 1/2 cup (soak 10 grams tamarind in water for 15 minutes, then squeeze pulp and strain it)
- Tomato puree: 1/2 cup
- Salt: to taste
- Toor dal: 1/4 cup
- Hing (asafoetida): a pinch
- Turmeric powder: 1/4 tsp
#### Tadka Ingredients
- Ghee/oil: 1 tbsp
- Mustard seeds (Rai): 1 tsp
- Curry leaves: 1 stick
- Coriander leaves: a handful
#### Method for Rasam
1. Take a pan and add 4 glasses of water, letting it boil.
2. Add tamarind pulp, Rasam powder, hing, turmeric powder, salt, and tomato puree. Boil for 7 minutes until all ingredients mix properly.
3. Add very watery cooked toor dal and let it boil for another 5 minutes, adjusting the water as necessary.
4. For the tadka, heat ghee or oil in a pan, add mustard seeds and curry leaves.
5. Add the tadka to the Rasam, boil for 30 seconds, and cover. Garnish with coriander leaves.
6. The Rasam is ready. Adjust the Rasam powder to your taste. For a spicier Rasam, add an extra spoonful. Add 1 tsp of sugar or jaggery if needed.
Vada Ingredients
- Urad dal: 3/4 cup
- Salt: to taste
- Cumin seeds: 1 tsp
- Green chili: 1, chopped
- Curry leaves: a few, roughly chopped
#### Method for Vada
1. Soak urad dal for 4 hours.
2. Grind it to a thick batter.
3. Use an electric beater to beat the batter until soft and fluffy, creating air pockets.
4. Add salt, cumin seeds, chopped curry leaves, and green chili. Mix well.
5. Deep fry the batter in medium-high heat oil until crispy on both sides.
Serving
- Add the vadas to the prepared Rasam.
- Enjoy this South Indian dish with Vadas/ Rice.
#### Tips
- Using an electric beater helps to create air pockets in the vada batter, making them light and airy. Alternatively, let the batter rest for 45 minutes and then hand whisk it nicely until light and airy.
