Rava Kesari Recipe
Ingredients:
1 cup semolina (rava)
1 cup sugar
1/4 cup ghee
3 cups water
1/4 teaspoon cardamom powder
A handful of chopped cashews and almonds
A few raisins
A pinch of saffron strands (optional)
Food color (optional, traditionally orange)
Instructions:
Roasting Semolina:
Heat 1 tablespoon of ghee in a pan. Add the semolina and roast it on low to medium heat until it turns aromatic and light golden brown. Keep stirring continuously to avoid burning. Remove roasted semolina and set aside.
Preparing Sugar Syrup:
In the same pan, bring water to a boil. Add sugar and stir until it dissolves completely.
Cooking Rava Kesari:
Gradually add the roasted semolina to the boiling sugar syrup, stirring continuously to avoid lumps.
Add the remaining ghee and mix well. Cook on low heat until the semolina absorbs the syrup and the mixture thickens.
Adding Flavor:
Add cardamom powder and mix well. Optionally, add a pinch of saffron strands soaked in a tablespoon of warm milk for a few minutes for color and flavor.
Tempering:
In a separate small pan, heat a tablespoon of ghee. Fry the cashews, almonds, and raisins until they turn golden brown. Pour this tempering over the rava kesari and mix well.
Serve:
Garnish with a few more chopped nuts if desired. Serve hot or warm as a delightful sweet treat!
