Ravigote Sauce Recipe
Ingredients:
½ onion (or 1 small onion), finely chopped
Fine herbs (such as parsley and chives), finely chopped
2 tablespoons red wine vinegar
2 teaspoons mustard powder
6 tablespoons vegetable oil
1 tablespoon capers
Salt and ground pepper to taste
Instructions:
Finely chop the onion and set aside.
Finely chop the herbs (parsley and chives) and set aside.
In a small bowl, add the red wine vinegar and mustard powder. Stir until the mustard is fully dissolved.
Add salt and pepper to taste, mixing well.
Add the chopped onion and herbs to the bowl with the vinegar and mustard mixture.
Gradually whisk in the vegetable oil until the sauce is emulsified and smooth.
Finally, add the capers, stirring to combine.
Serve immediately or refrigerate for later use.
