The physics of the f1 car in GTA sort of replicates real life f1 physics but not to the extreme. Losing the front or rear wing will greatly decrease downforce and decrease stability and grip. And modern day f1 cars have so much downforce they are able to “theoretically” drive upside down. I know no team would want to try this because not only it’s theorized, they don’t want to destroy their multimillion dollar race car for a little test.
