She couldn’t possibly be the Evil Queen as she would be older than her by ages. She wouldn’t have “stumbled upon” the Sun Drop flower, Gothel would have known about its existence and location for a very long time.

Actually, ratatouille could take place in the sixties ish because colette wears her hair in a hairstyle that was popular at the time. Any TV we see is black and white and also, bombvoiyage actually appears in the movie (as the mime in the scene where Colette and linguine are roller skating according to the producers) and he hasn't really changed much from ratatouille to the Incredibles implying little to no time difference

So staying in her old lady form and changing her name makes sense. 2) The tiny changes in appearance, hair texture, eyecolour etc. Is to throw anyone who is suspicious off the scent. 3) I'm just gonna assume there's a MASSIVE time jump between Snow White and tangled and to that I say SHES A WITCH, she can make potions to keep herself alive, but the ingredients are probably rare which is why she needs Rapunzel and the magic flower.
