Looks great. Totally agree that it's easy to make a hot hot sauce, but not as easy to make a tasty one. Do you sterilize the bottles or measure pH before bottling? I've read from some sources that that is necessary. But if you're going to refrigerate I don't see the need?

Problem with this is that you've added sugar at the end. This will 100% initiate the fermentation process again 🤔 needs to be heated in a pan after the sugar to kill the fermentation. other wise it sounds pretty bl00dy tasty 👍🏽
Hey Tom the hotter the better :-) My wife and I each ate a raw ghost pepper and we never will again as it was beyond hot. It made a habanero pepper seem like candy :-) I don't know where to get Carolina Reaper Peppers, I may have to substitute it with Ghost Peppers. I had no idea you were in the hospital, I hope you are recovering well. I'm the process if following this recipe, one question come to mind and pardon the ignorance but the 3 week fermenting process is it refrigerated or room temperature? Can anybody direct me the right way? Thanks in advance and keep them coming!

I absolutely LOVE hotsauce, anything hot but unfortunately it doesn't like me. Still love watching ya. Also I'm so glad your on your way to recovery. I worked in cardiology and know how important it is not to over do it. So, ya got somebody watching out for ya ; ) Take care my friend!
