What I do for drafting DT's is draft DE's with high bench press and convert them to DT. They always become great overall, but not always quick or superstar dev, but I think of that just cause I take them in late rounds

The thing with the drafts is, ratings have all been redone this year. There's a much bigger gap between truly elite 90+ guys and the run of the mill high 70s/80s guys. That year 2 draft class would've been epic in Madden 17, sure, but those high 70s OVR guys you showed mostly had slow development traits. Your top guy was 79 overall, which isn't going to set the world on fire or anything. That 98 speed guy is pretty exciting though! While you had a pretty good team in year 5, you didn't have a single elite guy on the roster (except your QB right at the very end, right on the cusp). You needed your Antonio Brown/Julio Jones/Odell type star receiver IMO. Sterling Shepherd was pretty good, but there was no game changing superstar.
