The fagor literally only has an on state and off state so when you are at 6 it will launch up to temp then completely turn off for a bit, then turn on for a bit and so on. Makes for tons of inconsistencies. Mr. Induction has less dramatic swings from our experience.

For some reason the very name John Dory conjures up fish imagery. So the title seems....right. Should this fish be called the Nigel Bassingthwaite-Hickory, i doubt it would appeal......?

To have a similar cooking in sous vide you can cook them at the same temperature even by cooking them immersed in oil

I notice sometimes the bag is sealed and other times it's left open. Like veggies it's sealed but meats just pinched on pot. Does it really matter?

Why slice the fish after cooking as opposed to before?

you'd be wrong. It'd be part of a many many course meal that possibly cost 100 dollars combined. The real kicker in fancy restaurants are usually the wine menu

This looks good, but stirring the almonds with tweezers is a bit much. Its not a science experiment!

actually it kinda might be!! they're an experimental test kitchen, basically a food lab ~ but i agree, the tweezers are a little hilarious

they're just stirring the almond with tweezers because it was at hand, it was mainly for flipping the more fragile mushrooms. kitchen tweezers are a very real thing
