Honestly you're so right. Everyone is constantly slobbering over these instagram cakes, but most of them taste basic. it's really cool that you showed a cake that isn't as pretty or instagram photo ready, but probably tastes great.
This is the first time I've used Polenta and it's the most delicious cake. I highly recommend making this. I think I will try it with orange juice next time.

I would like to make this cake one day before, but can I also put the syrup on the day before or should I pour it over the cake the same day I serve it, if someone can advise me of the best method that would be a great help to me. I’ve also heard it’s best to pour the syrup while the cake is still warm?

I made this last year for a dessert auction and it got top dollars. The people who won it absolutely loved it, so making it again for this years fundraiser. I didn't get to taste in though. Stioll not sure about my question as nobody responded.
Use some other nut if you can, like hazelnuts or macadamia or cashews, anything you might like. If you're generally allergic to nuts I don't think there's anything to substitute..
Warm cake will absorb the syrup well but I'm sure cold will be fine. My icing sugar disappeared when warm so perhaps leave that till cake is cold. Enjoy.

Isn't that the same thing: canola oil and rapeseed oil? Here in Ireland we call it rapeseed oil and I know in America they call it canola oil. Donal can correct me if I'm wrong. Carrot cake - good choice :) I'm sure it will be delicious :)
