I have this video in my downloads on RU-vid. It’s the only red beans recipe I will use after trying so many. I’m in Oregon and my only actual exposure to authentic red beans and rice is a small local restaurant owned by a man from Louisiana and this is the ONLY recipe I’ve found that gets the same thick gravy as his. Thanks!

Well first thing he didn't put the holy trinity. Onion, bell pepper, celery and the fresh garlic is the pope. And we use chicken broth not water. And I've never met someone that took the grease out.... fat is flavor. But to each is own. Check the cajun ninja, his is a little more accurate

This guys cooking is anything BUT! Cajun. I’m Cajun, and Iain’t never seen nothing like what he’s doing. He’s no more Cajun than that crap he put in there is andouille sausage. People confusing andouille seasoning instead of andouille making methods, has now opened the flood gates to all the commercialized hot dog meat being called andouille. There’s no such thing as andouille seasoning. The big commercial meat packers couldn’t compare to Richard’s Cajun sausage, so they laid in wait until people drew their own conclusions and assumed andouille was created by seasonings rather than production and smoking methods. The oldest and most world renown andouille comes from Laplace Louisiana, and is seasoned very lightly with salt, pepper, and red pepper, that’s it! Clowns!

You did not soak bean to get rid of inedible starch which cases gas and you had fire up to high, you should simmer over low heat, you don’t add salt and other dry seasoning until towards the end, if salt added early on like you did make beans tough, I bet you we’re definitely had gas that night, use fresh garlic with trinity, I did like your technique to remove oil

Oh yeah, brown the sausage first, drain and set aside - then do the veggies, (i just use a bit of the sausage drippings, more flavorful than canola), so you don’t lose those veggie flavors down the drain! Then add the sausage back to the pot. Also, the beans will be a lot less “gassy” if you soak them first and discard the soak water 💨💨💨

Why saute your veggies in canola oil, than cook sausage that releases tons of flavored oil only to drain it all off? I cook my sausage and then add my veggies to the fat that comes out of the sausage. The flavor is 10x better and #1 your not wasting canola oil and #2 There is no reason to drain all the flavor from the sausage fat because Great Anduoille sausage doesn't have too much fat in it to begin with. Justin Wilson would be ashamed of this parydee on Cajun cooking

Bro that was a good one having city slickers scratching their heads over, "are female green bell peppers really sweeter." "Is there a difference between male and female bell peppers"? by Amanda McWhirt - January 19, 2021, University of Arkansas, Division of Agriculture. You may have heard that female bell peppers have 4-5 lobes and are sweeter than male bell peppers that only have 3 lobes, but is that true? Answer: No. There is no such thing as a male or female pepper fruit!
