Yes, he's actually playing through the changes harmonically at times, but it never clashes.

I think it's because of the guitar. People are very particular about how the guitar should play when accompanying old-time. I don't mind it that much, but some would say that this "shredding" style masks the interaction of fiddles and banjo.

I think you may be right here,.but I like it very much. The guitar style gives a rhythmic drive very similar to what you hear in contemporary Irish "string band " music.

This is the absolute best version of Red Steer BECAUSE of the guitar player/double fiddle.

It's a style of guitar playing that's evolved to accompany Irish music, featuring "cross" rhythms chords. I often don't feel it particularly fits Irish fiddling, and it seems even more out of place in Appalachian string band.
