This simple and tasty plant-based red Thai curry is quick and easy to make, made with a variety of fresh vegetables and baked tofu for added protein. It is ready in less than 30 minutes especially if you prep the veggies before hand.
Start by sautéing onions and carrots until soft, then stir in red Thai curry paste for a rich, spicy base. Add broccoli florets, shredded cabbage, and edamame beans, simmering them in coconut milk until tender. For extra protein, include lightly seasoned, baked tofu cubes, which absorb the flavors of the curry. Serve the dish over jasmine rice, garnished with fresh herbs like cilantro or Thai basil, for a hearty and satisfying meal.
I made this before we set out to buy "school" supplies (as a homeschooling family), and here are my tips for getting the best supplies:
1. Start by checking the school’s supply list, make sure to cover the basics like notebooks, pencils, and backpacks.
2. Add essentials such as binders, folders, and calculators, while also picking up art supplies like crayons and markers for younger kids.
3. Don't forget items like lunch boxes, water bottles, and hand sanitizers. Let your children choose some of their favorite designs or colors for a fun, personalized touch. Your aim is to equip your child with everything they need for a successful school year, happy shopping 😊
