Authentic Dishes with my personal Touch 😍
Ingredients
for Red Sauce
Tomato -2
Butter -
Garlic -2
Red Chilli Powder -1/4tsp
Crushed Chilli -1/2tsp
Pepper Powder -1/4tsp
Salt -
Sugar -1/2tsp
Food Colour -(opt)
For White Sauce
Butter -1 tbsp
Oil -1tbsp
Maida or Atta -1tbsp
Milk -1 cup
Salt -
Hot Water -1/4cup
Cheese -
Method
Mark a small cross on the tomatoes. This will help in removing the skin once it is cooked well. Add this tomatoes to the boiling water .When you see the skin peeling off you can remove it from the fire and allow it to cool. Now peel the skin off the tomatoes. Grind this tomatoes without water. Keep aside
In a kadai cook the pasta in boiling water for around 10 mins on high flame. Add salt and olive oil in the boiling water before we add the pasta. This will stop the pasta from sticking to each other. The pasta should be 3/4th done.
Now take another kadai and add some butter. Add some garlic pods. Saute well on medium flame. After the garlic is cooked add a pinch of chilli powder. Mix well. Then add crushed chilly and pepper powder. Saute well on low flame. Add some oregano and basil. Add the ground tomatoes. Add salt ,ketchup and a pinch of sugar. You can add a bit of beetroot juice(for pink colon).
Now for white sauce - Take a kadai add some butter and oil on medium flame. Keep the milk and Maida nearby. Add the whole purpose flour(Maida) to the melted butter. Cook on medium flame. /when you seethe bubbles add the milk . add a little salt. Stir and cook till the sauce is thickened. Now add it to the pink sauce. Add the cheese to your preference. Add milk or hot water to adjust the consistency. Now add the pasta to this sauce. Do not overcook. You can check the seasoning and adjust accordingly. You can garnish with basil leaves. Serve Hot
