2 pounds conch meat (from 4 large or 5 medium conch)
1 cup Vietnamese salad dressing, divided
1 red onion, sliced
1 pound red radish
5 stalks celery, sliced thin
2 medium cucumber
1/2 lemon, squeezed
1/2 cup Vietnamese coriander, chopped
1/2 cup mint, chopped
fried garlic
chili sliced
4 ginger, sliced
