Everybody - I know you can hit 'select' and heal in between rounds. The booty emulator I was using had the select button mapped to close out the game for whatever reason, so I couldn't use it. It's fine though, it was like playing on hard mode.

Tapping the select button between rounds makes doc’s hand pat his shoulder faster and gives you a life boost for round 2. Only works once per fight.

You'll never see this but here are some of the stars that I know of (that also are not buffer strats). Great Tiger: Jab him when he tried to uppercut. Bald Bull 1: When he does those jabs, hit him in the face. Honda 2: Not a star, but if you get him down with his rushing shit, he is OUT. Soda Popinski: After each move, I recommend holding block until he goes for an uppercut. The reason is that if you are blocking during an uppercut, he won't do it, so you can punch him for a star.
