How often are you honing/sharpening this knife and what do you use? Thanks for this content! I was gonna throw down on a MAC but if I can get 2 or 3 good Mercer options I’d rather go down that road.
Not very often - I have a few of the Mercer knives that I rotate through and the edges last much longer. I’ll usually hone after a few uses but I’m switching constantly between a paring, utility, Santoku, Nakiri, and multiple chefs knives that the overall sharpness and edge integrity can’t be matched by a single knife used daily. I’m like you, if I can get the same cut and feel from having multiple knives that are similar and come in at a lower price point than making a single big purchase, that’s the way to go.
The handle. The genesis has santoprene handles, the renaissance has POM (polyoxymethyline) handles. Some genesis knives come with full bolsters, some have half bolsters. I believe all the renaissance has half bolster knives for easier sharpening.
