600 gr daging sapi, bisa tenderloin TU sirloin or sandung lamur kalau mau ada lemak
15 siung Bawang merah
8 siung Bawang putih
3 sdm Ketumbar
2 cm Lengkuas
1 cm Jahe
3 sdm Gula merah
7 sdm kecap manis
50 ml Air asam jawa kental
1 sdt royco sapi
1 sdt Garam
1 sdt Lada bubuk
2 sdm minyak sayur
Sambal tomat cabe:
1 buah Tomat
3 siung bawang merah
6 buah Cabe rawit merah atau selera
6 buah Cabe rawit hijau atau selera
1 buah Jeruk limau
kecap manis secukupnya
Bahan lain:
40 buah tusuk sate
3 lembar daun pepaya

3 tbsp toasted corriander seeds
2 cm galanggal
1 cm ginger
3 tbsp brown sugar
7 tbsp sweet sauce
50 ml thick tamarind water
1 tsp beef bouillon
1 tsp salt
1 tsp ground white pepper
2 tbsp vegetable oil
Tomato and sweet soy sauce sambal:
1 tomato
3 cloves shallot
bird's eye chilies
green chilies
1 kaffit lime
sweet soy sauce
others:
