Restaurant Style Dal Khichdi | होटल जैसी दाल खिचड़ी घर पर बनाइये | Chef Sanjyot Keer

Full written recipe for Dal khichdi
Prep time: 20-25 minutes
Cooking time: 20-25 minutes
Serves: 2-3 people
Cooked dal
Ingredients:
Split pigeon peas | तूर दाल 1/2 cup
Red lentil | मसूर दाल 2 tbsp
Bengal gram | चना दाल 2 tbsp
Ghee | घी 1 tsp
Cumin seeds | जीरा 1 tsp
Ginger | अदरक 1 inch (julienne)
Green chilli | हरी मिर्च 1 nos. (slit)
Method:
Wash & soak all the dals for atleast half an hour.
Now take pressure cooker, add ghee and heat it well, further add cumin seeds, ginger & green chilli, stir once & add all the soaked dals.
Further add turmeric powder, salt and water, fill water up to 1 inch above the dal surface, stir once and pressure cook for 3-4 whistle on medium heat. Let the cooker depressurize naturally to open the lid.
Once depressurized, open the lid to check for the doneness of the dal. Keep the dal aside to be used later.
Cooked rice
Ingredients:
Basmati rice | बासमती चावल 3/4th cup
Salt to taste
Method:
Wash the rice well and soak it for at least 15-20 minutes, by the time set water for boiling the rice, make sure to add salt in the water.
Once the water has boiled and the rice has soaked well, add the soaked rice in roaring boil water and boil the rice for at least 6-7 minutes, once boiled strain them and keep them aside.
Dal khichdi
Ingredients:
1st tadka
Ghee | घी 1 tsp
Onion | प्याज़ 1 medium sized (chopped)
Garlic | लेहसुन 1 tsp (chopped)
Ginger | अदरक 1 tsp (chopped)
Green chillies | हरी मिर्च 1-2 nos. (chopped)
Whole red chillies | लाल मिर्च 2-3 nos.
Tomato | टमाटर 1 medium sized (chopped)
Salt | नमक to taste
Turmeric powder | हल्दी पाउडर 1/4 tsp
Kashmiri red chilli powder | कश्मीरी लाल मिर्च पाउडर 1/2 tsp
Coriander powder | धनिया पाउडर 1 tsp
Garam masala | गरम मसाला 1/2 tsp
Cooked dal
Cooked rice
Hot water as required
Dry mango powder | आमचूर पाउडर 1/2 tsp
Kasuri methi | कसूरी मेथी a pinch
Lemon juice | नींबू का रस 1/2 tsp
Fresh coriander | हरा धनिया small handful (chopped)
2nd tadka
Ghee | घी 1 tbsp
Whole red chillies | लाल मिर्च 1-2 nos
Asafoetida | हींग 1/2 tsp
Kashmiri red chilli powder | कश्मीरी लाल मिर्च पाउडर 1/2 tsp
Birista | बिरिस्ता 1 tbsp
Method:
For the first tadka, set a pan on medium heat, add ghee & heat it well, further add cumin seeds and let it crackle.
Further add onions, garlic, ginger and green chillies, stir and cook until the onions turn translucent and the garlic is also cooked.
Now add, whole red chillies, tomatoes and salt, stir & cook until the tomatoes turn mushy.
Further lower the flame & add powdered spices and mix well, add little hot water to avoid the burning of the spices.
To make it taste like restaurant, you can do a small step, just increase your flame to high and tilt the pan a little bit, doing this pan would catch fire and the khichdi will get the smoky flavour, now add the cooked dal and rice, stir and cook for 2-3 minutes.
After cooking the dal & rice with the tadka if you feel the khichdi is little thick, you can add little hot water to adjust the consistency.
Now add the mango powder, kasuri methi, lemon juice and freshly chopped coriander greens. Stir & cook for a minute, your restaurant style dal khichdi is ready.
To elevate its flavour, serve it by pouring a fresh tadka, for fresh 2nd tadka, heat a pan, add ghee and let it heat, further add whole red chillies, stir briefly and switch off the flame, add hing, red chilli powder and brista, pour this immediately over the hot dal khichdi.
Your restaurant style dal khichdi is ready, serve hot with some papad & some salads.

I tried it and it was really good. I improvised it by roasting the Dal mix in ghee for 2-3 mins before putting it in the cooker which gave a nuttiness to the khichdi. Thanks for the recipe, Chef. I love to come to this channel every now and then.

He used three different cookware, three different cookware for KHICHDI !!! Khichdi is a one pot dish, for poor and the rich. Kichdi is kichdi. keep it simple. No one wanna get a Michelin star for cooking khichdi

Actually, this is not the simple khichdi that we eat at home. I have personally only had this in restaurants in Mumbai. I don't think you get this in North india. It is so amazing. I always eat it when i visit Mumbai. There is a palk dal version as well. Do try if you get a chance to go to Mumbai ( assuming you are not from there). 🙏🙏

Doing this much work in khichdi is wrong bro. Like I am not even new to cooking , but the restaurant style result can be easily made without doing this much work . Khichdi is all about adding everything to one pot and cooking it .

I tried this recipe yesterday for dinner and it turned out to be soooooooo frickingg delicious! I followed exact recipe. Thank you chefff🤝💝 Also, i made two versions, one with onions (acc to the recipe) and one without onions for my grandmum. Both of these turned out to be amazing. And is literally so easy once the preparation is done. I made them in batches for single servings to serve hot just like the restaurants😉 Thank you chef. Thanks a lot. 😊

A similar recipe was uploaded an year ago or so on yfl channel just without chef's detailed explanation about each step. Ive made dal khichdi from that recipe soo many times and everytime i make it, my family loves it!😍😍♥️ it tastes exactly like restaurant dal khichdi!

My mom prepares this delicious dal Khichdi same way ..... it will be sooo yummy... but she add few potatoes sliced half fried little on ghee... with turmeric salt nd dash of red chilly powder... we children love potatoes so only. Adding potatoes it tastes more delicious.

Respected and followed Sanjyot ji, I very much love Dal Khichdi and any restaurant in India I ask for Dal Khichdi. I tried this recipe as my first recipe followed your channel and it has come out as great taste. This recipe is life survival in any situation. Dhanyawad.

I think khichdi is supposed to be khichdi (pain and simple) this restaurant style is overkill... Just my opinion...

Hey Chef, I tried this recipe and got that exact smoky flavour. I used a small pan for tadka and it wasn't as difficult as it looked. Thank you so much for your amazing tips.

Love this recipe! I'm a Sindhi and we don't make this kind of khichadi but I've had it at a Bengali friend's place and loved it. Recently I tried to make it by cooking moong dal and rice together but it turned out too bland and dry. Your tadka makes it look super special and I'll be trying out this khichadi recipe tomorrow itself!! Thanks for sharing it 😋

Thankyou and appreciate your recepie. I just tried it, but sadly the colour of the khichdi was dull brown and not golden & delighful like yours. Just 1 more thing, since I am not experienced in cooking, would like to see small notes in your next recepie to suggest the quantity of spices, chillies, onion etc are for how many servings

Absolutely wonderful recipe and wonderful details given. Although i do make the dal khichidi with the smoky flavour but my dal khichidi is still not 1:1 restaurant style. If its possible for you to replicate 1:1 taste using the so called secret masala's which restaurant uses then please do post a video. Also if possible then please do mention your utensils used in the video in the description or at the start of the video which i think is important. Your utensil seems to be something which is not non stick pan but carbon steel or aluminium pan and cooking on high flame is not possible if non stick pan is used and could damage someones health if that person didnt read the manual of non stick pan. Important points which i feel would be :- 1) So called secret masala's of restaurants. 2) Utensils used in the video from cookware to gas would be great if included in the video. Overall superb video and absolutely wonderful recipe. As always keep improving as you have improved since 2016.

Khichdi is done in a shorter period of time. I mean, if you take so much time, it's not an efficient way of doing

If u add jerra, then skip other masala,neither next masala can use at proper khicudi/khichuri, after all u added too much ingredients, such as -dhania leaves,amchur, lemon,garam masala. So try to improve your exact khichuri preparation.

I love all your veg recipes. Please also make 'onion-garlic free' versions of every recipe. Ifp. Btw, according to Vedas, onion, garlic, mashroom, carrots and masoor dal are verjit (forbidden) as they tend to make consciousness tamoguni. (Tamas)

I Think.....That remaining water which we use for cooking rice must be reused .....it contains lots of nutrients from rice........a nice receipe .........👍👍👍

Made 3rd khichdi of my life all from diff youtube videos.. this was almost perfect.. harbara dal 90-95% cooked... rest was perfectt.. atleast in my books😅😂

Sorry to say that this is not at the right process. All the pulses and rice is coocked at the same time... Please go through the best system while following the BENGALI syle of making khichdi

भाई, ये तो दाल चावल बना दिये आपने, इसे खिचड़ी थोड़े ही कहते हैं। ये रेस्टोरेंट स्टाइल खिचड़ी तभी तो स्वादिष्ट नहीं लगती !!
