Karhi Pakora Recipe Ruby ka kitchen
This traditional dish combines yogurt, gram flour, and spices to create a flavorful curry, enhanced with delicious pakoras and a tempering (tarka) of dill leaves and butter.
Ingredients:
For Karhi:
Yogurt: 1.5 kg
Gram Flour (Besan): 4 tbsp
Water: As required
Onion: 1 (finely chopped)
Oil: 3 tbsp
Turmeric Powder: 1 tsp
Salt: To taste
Red Chilli Flakes:1 tbsp
For Pakoras:
Gram Flour (Besan): 1 cup
Water: As required (to make a thick batter)
Salt: To taste
Red Chili Powder: 1 tsp
Cumin Seeds: 1/2 tsp
Baking Soda: 1/4 tsp (optional, for fluffiness)
Onion:medium
Potato:medium
Oil: For deep frying
For Tarka:
Butter: 2 tbsp
Dill Leaves (Soya Saagh): One bunch (finely chopped)
Yellow Powder: 1/2 tsp
Instructions:
Step 1: Prepare the Yogurt Mixture
Mix Yogurt and Gram Flour: In a large bowl, whisk together 1.5 kg of yogurt and 4 tbsp of gram flour until smooth.
Add Water: Gradually add water to the mixture to achieve a medium-thin consistency (similar to a thin pancake batter).
Add Spices: Mix in 1 tsp of turmeric powder and salt to taste. Set aside.
Step 2: Cook the Karhi
Heat Oil: In a large pot, heat 3 tbsp of oil over medium heat.
Sauté Onions: Add the finely chopped onion and sauté until golden brown.
Cook the Mixture: Slowly add the yogurt mixture to the pot, stirring continuously to avoid lumps.
Simmer: Bring to a boil, then reduce the heat and let it simmer for about an hour, stirring occasionally.
Step 3: Prepare Pakoras
Make Batter: In a mixing bowl, combine 1 cup of gram flour, water to make a thick batter, salt to taste, 1 tsp red chili powder, 1/2 tsp cumin seeds, and 1/4 tsp baking soda (if using).
Deep Fry: Heat oil in a deep frying pan. Drop spoonfuls of the batter into the hot oil and fry until golden brown and crispy. Remove and drain on paper towels.
Step 4: Add Pakoras to Karhi
Add Pakoras: Once the karhi has thickened and is well-cooked, gently add the fried pakoras to the karhi. Let them soak and cook for an additional 10 minutes.
Step 5: Prepare the Tarka
Heat Butter: In a small pan, heat 2 tbsp of butter.
Add Dill Leaves: Add the finely chopped dill leaves and sauté for a minute.
Add Turmeric: Add 1/2 tsp of turmeric powder and mix well. Cook for another minute.
Step 6: Finish the Dish
Add Tarka to Karhi: Pour the prepared tarka over the finished karhi.
Garnish: Mix gently and garnish with additional dill leaves if desired.
Step 7: Serve
Serve Hot: Serve the karhi pakora hot with steamed rice or roti.
