I’ve read somewhere that just sanding down the old paint and to just spray over it allows the paint to stick better, but would you prefer that or removing all paint and doing it again?

All in all, a pretty good job. What worries me, however, is the sliding, or rather hammering, of the bearings through the inner race. Although the sockets are greased, but still a pity! This old shaft, in my opinion, should be dismantled and the bearing on the crank pin replaced. Congrats on your ambition, greetings 👌.
Very nice, excellent how you demonstrated very well how you put everything back together. BTW should protect your arms with overalls or cheap hazmat suit. You don't want paint products getting deep in your skin and blood stream. I have an 81 express and would like to polish up the crank cover, looks awesome. Looking forward to the finished product.
Всё прекрасно , только есть 1 но !!! подшипники забиваются оправкой за наружную обойму . То что забили валом в видео они долго не проходят цементация нарушена !
