The Grey plastic ones are from Robart, the metal ones I got from Hobby King. the retractable tailwheels came from robart. The units that I like best is E-Flite which is not shown in this video.

The connector on the electric retracts would plug into the reciever just like any ESC or other servo. I typically put the landing gear on channel 5 or higher and assign it to a toggle switch.

Any of the main or nose gear units are designed to swing thru a set number of degrees. Some only move 80 degreees, the majority will swing either 85 or 90 degrees. The 105 degree units are are used for some twin engine main gears or nose gear units. Not sure what you mean by straight out.

if you are looking for a retract unit with the electric jackscrew on the opposite side of the retracted position some manufacturers offer this type of design
