Instructions
Get your discs in chd file format and place them all in one folder named the name of the game.
Example
Folder named "Final Fantasy VII"
Contents
Final Fantasy VII (USA) (Disc 1).chd
Final Fantasy VII (USA) (Disc 2).chd
Final Fantasy VII (USA) (Disc 3).chd
Next create a text file containing all the discs 1 disc per line
text file should look like this
Final Fantasy VII (USA) (Disc 1).chd
Final Fantasy VII (USA) (Disc 2).chd
Final Fantasy VII (USA) (Disc 3).chd
Now save that text file and put into that folder "Final Fantasy VII"
Now change the extension from .txt to .m3u.
If windows give you a warning just proceed anyway.
Finally, you can add your box art to this folder as well.
So the folder "Final Fantasy VII" should look like this:
Final Fantasy VII (USA) (Disc 1).chd
Final Fantasy VII (USA) (Disc 2).chd
Final Fantasy VII (USA) (Disc 3).chd
Final Fantasy VII.m3u

Big thank you to my viewer @khalilawwad588 who pointed out how to add boxart for this method.
General Tips
Make sure the folder and .m3u file share the same name.
Shorten the names of the games to leave out regions and version to make it easier on yourself.
