OH MY GOODNESS!! I tried putting it in the oven and WOW! So much time saved this way. My daughter in-law is vegan and she use to love rice pudding,well I finally mastered it that it taste just like my moms. Thanks for the tip!!!!
You are the first person I've seen that makes the rice pudding like my mom and now me. Without cooking the rice in water first! We always use just the milk. I don't put butter in mine, but next time I will add some. I also turn off the stove, but I leave the pot on top of the stove for about 20 and then bring it to a simmer again. Amazing!!!! I made this last night for my family in my blue Lodge cast iron enameled Dutch Oven. It was a breeze. I especially loved baking it in the over for 40 minutes! It was also perfect that I had the pearl rice in the pantry too. I have always wanted to make this but felt intimidated and afraid to scald all that beautiful milk. My Pampered Chef Mix and Chop was helpful to incorporate the cooked rice into the milk mixture after cooking in the oven. Next, I want to try the tuna garbanzo bean salad using dried beans because the canned beans contain too much salt for me health wise. I plan to use the Garbanzo bean salad with tuna on a bed of lettuce for lunches. Thank you! This was a super fun and unique recipe. 🤩🤩🤩🤩🤩

Angela, what would be the ratio for a smaller quantity. Like the large Pirex you used to put the cooked rice in. There’s only 2 of us, and I’m the only one who it. My husband hates rice pudding……I love it!
Hey Angela , I'm new to baking and want to experiment with Portuguese baking to get in touch with my Portuguese roots! First of all want to say, the recipe looks delicious! secondly, wanted to ask, as a new person to baking , would you say that this recipe is more challenging or easy? Lastly, you mention that you put the pudding in the oven. Did you put the pot that was on the stove into the oven or did you transfer the contents (the pudding) it to an oven-safe dish?
Welcome to my channel ! All my recipes are easy to make. I put the same pot in the oven and this way the rice cooks evenly and you don’t have to keep stirring the rice. After the rice absorbed most of the milk and it is cooked I take out the oven and put back on the stove to see if the consistency is right. I like a creamy rice pudding. Hi Angela! Thank you for sharing your recipes and your youtube with us. It's great! A couple comments: you were picking up the one camera to show your pot contents, but that wasn't showing up. Also you had said you were going to write the recipe in the comments but all I see is "Portuguese rice pudding done my way" -- and your way looks perfect. I love how you cook it in the oven -- brilliant! Since the recipe isn't here, if using regular lemon zest, how much would you use? I'm assuming at least zest of one lemon, but maybe two?
CA Kath I would use one but if you like lemon go 2. The camera was recording in the wrong setting. I couldn’t use that segment I was bummed. But that how we learn.
I am unable to find pearl rice. I used long grain enriched rice and was not happy with the results. I think pearl rice would make a big difference but I cannot find it in my local grocery store/supermarket..
