I remember snaffling a brilliant Kedgeree at the RCHQ Festival in August 2018 - couple of young lads were cooking up a wonderfully huge, delicious pan of it on one of the food stalls down near the main stage in the meadow ... Looking forward to happy days like that again :)
Kedgeree, a British Indian dish is a reformed version of Khichadi. I've found many recipes in YT but respectfully they don't know how to play with the spices. Your recipe has that balance and appears to be aromatic.
Nope without smoked haddock you haven`t got a Kedgeree, Its like having beef gravy instead of Bolognese sauce and calling it Spaghetti Bolognese it just wont do.
This is about our current situation in lockdown, where things like smoked fish isn't always available. I'm sure, as a trained chef Hugh knows that smoked fish is more traditional, but he's giving people ideas about how to use leftovers. Maybe a more positive comment would have been better than being a smart-ass!
