Brian you always throw your baking sheets on your pizza steel. Doesnt this either 1) scorch the bottom of the buns if the steel is up to temp, or 2) Undercook the bottom if the steel is coldish?
I also worked at Arbys. I can't speak for states outside of the midwest but here the buns are made locally by Pan-O-Gold. If you want to skip the breadmaking look for "Country Hearth" brand onion rolls. Exact same thing (literally)
Technical comment from a former Arby's employee: the Beef and Cheddar does not have Arby's sauce in it, but rather Arby's Ranch Sauce, which is also red, but unavailable in sachet form. The Ranch sauce is fruitier and sweeter than Arby's sauce.

@@ilovecokeslurpees Former Arby’s manager here, an acceptable substitute for the Red Ranch sauce is Catalina French dressing. A couple of times when we ran out of the red ranch because of delivery issues, we used that and no one noticed. 😊
The largest top round roast I could find at my local store was 4lb so that is what I used. It cooked up just as nicely (Looked great when cut in half). Like you said Bran, the shaving of the beef was the hardest part. I did my best and I'll declare this recipe a winner. The sauce was fantastic. We'll keep that on hand for burgers for now on. And the cheese sauce will be adjusted for nachos and tacos etc. The only adjustment I will make is to dial back on the salt and pepper rubbed on the outside. It was very salty. Another weeknight winner.
My family declared this a recipe we need to make again! Thanks!! I didn't have time to make the rolls, so I bought Kaiser Rolls, egg-washed them, and sprinkled poppy seeds and Maldon salt on top. Worked perfectly!

Made these buns 2 days ago and used instant mashed potato flakes. It worked perfectly. Use 1/4c + 1Tbs instant potato flakes with the same amount of water will get you to 75g of mashed potato. 👍 Making another batch today. These buns are the Bomb!
thank you thank you!! Years ago (like a few decades lol) Arby's had a bacon cheddar deluxe. No red sauce, mayo (I ordered without), shredded lettuce, tomato, bacon all on top of the beef and cheddar. It was my favorite! I will be making it next week!!

@@BrianLagerstrom Yeah, in the cooking school I attend they had problems finding a steady supply of evaporated milk . They tried evaporating normal milk, adding cream to milk, etc. After trying a myriad of methods they found adding powdered milk was the most easiest and cost effective.
Hey Bri! ... Any chance you might take on the muffaletta sandwich at some point? I mean the original Central Grocery muffaletta with instruction on making the Sicilian bread, the olive salad, and all the detail in between. I see a lot of recipes online, but people either punt on making the bread, or they just plain get it wrong. I'd REALLY like to see your instruction on this. --- Thx! These rolls are exceptional!!! Without a doubt the best! I used bread flour instead of all purpose flour and added a touch more liquid and just happened to have dough conditioner on hand that I was wanting to use. Worked like a charm. I mean, the beef and sauce were excellent as well, but for us the star of the show were the onion rolls. Definitely worth the effort. YUM
The thumbnail alone is making my mouth water. I'd love it if you made a bialy video. I had them for breakfast sometimes when I visited my grandma in New York. That's something I'd love to recreate.
What’s worked for me is the sharpest knife I have and sharpen it/hone it right before I slice and to toss the roast in the fridge. But you don’t get that warm fresh sandwich…unless you dunk in some warm beef broth before building.

Okay, this is scary! I just ordered that for lunch from Arby's but now I don't even want it after watching your video because yours looks so much more amazing. Fun fact: I live and work like half a mile from the original Arby's (Store 0001) and unfortunately what I got today is the saddest looking roast beef and cheddar I've ever had, I mean in comparison to watching your clip.
I pull up your channel to bring up the Oklahoma Onion Burger recipe (that's dinner tonight) and had to stop in my tracks to watch this. Holy cow that looks good. I'm not usually tempted to make the rolls from scratch for these types of recipes, but man.....those onion rolls really look amazing. I'm going to have to try this on a weekend!!
For a steak style sandwich i like to souvide chuck roast for 24hrs, sear, slice thin and serve. I have done a cheese steak style sandwich like this, tacos etc. Lots of options, great video, great bread...thanks
