Air fryer is working great for my small hobby batches. Tried small batches first to get the time and temp for flavor but also for shell release.

HELLO. I know that this may be a bit late of a comment but I just recently seen this video. I wanna ask about the type of roasting process that will affect our cacao beans. We are currently using a form or direct heat transfer we cook our cacao bean in a pan and continuously, my question is in that type of roaster does it have the same type of roasting or a heat is in a different place more like a barbeque oven. Thanks

Hi Marc, the San Franciscan Roaster shown in the video is heated by a natural gas-fed burner manifold that is located underneath the rotating drum. The design of the roaster is intended to allow the user to balance out the amount of convective and conductive heat transfer to the beans depending on their application. Do you have any recommendations on small scale roasters? I would love to know if there is a 5 to 10 lb batch roaster capable of processing cacao AND coffee alternativly. I've checked both websites of Hottop and Cacaotown so far and talking with reps but wish I knew from a industry professional what would work best.

Hi, Im from South Arica, Cape Town I am diabetic and make my own goodies. I have been trying to get a perfect chocolate recipe, but most are not fully informational. I watched your vidoes, like like...but am still not too clear about measurements. how many gramss of liquid cocoa butter and how any grams of cocoa powder would be the perfect measurement for chocolate? Also can the same measurement be used for baking chocolate? I will really appreciate your advice. Priscilla

1. Bitternes depends of the beans you're working with, how it was fermented and dried, but also it adds some with bad roasting and milling. 2. Those are the basics, butter makes it creamier like a "coberture" type of chocolate, you can work with whipped cream but you'll get a ganache, not a chocolate 3. Put it in the fridge(?)...

In his video for oven roasting, he says roast for 5 minutes at 300 F, then drop to 275 F for 15 minutes, and finally drop to 265 F for 10 minutes

if you were making the equivalent of $15/hr., i'm sure the cost of the machines could be justified, particularly given financing. that's not a criticism, it's just basic economics.
