San Francisco’s newest rooftop restaurant serves the best of Japanese-Peruvian cuisine in an electric atmosphere.
Located in Union Square, San Francisco, Chotto Matte offers guests plates of Nikkei cuisine that’s bursting with flavor.
"I’m going to give everyone great food, great ingredients, great experience, great design, great locations, but I want them to come and relax," said Kurt Zdesar, the founding partner of Chotto Matte.
The restaurant encourages all to "come as you are" to experience a fusion of cultures.
"It’s Nikkei cuisine, it’s the evolution of cuisine that evolved from Japanese people over a hundred years ago migrating en masse to Peru," described Zdesar. "And it’s where those two cultures have come together in the kitchen."
At Chotto Matte, sashimi meets chili, citrus, onions, and coriander to create a vibrant harmony that excites the palate. Plus, local Bay Area chefs have put their signature spin on the menu options.
"We like to have an ability for our local chefs to have their imprint," said Zdesar. "We’ll have a San Francisco section on the menu that’s taking all of these principles, but using unique ingredients that we can find here."
He added, "All the produce is local, it’s organic, it’s hormone free, it’s non GMO."
Chotto Matte has select locations in Europe, the Middle East, and North America. The newest San Francisco location is important to Zdesar.
"I always try to find unique locations, that we can turn into unique experiences," said Zdesar. "For me, this rooftop in San Francisco by Union Square with this beautiful view is something spectacular."
