In this video, I'll show you how to make a traditional German cheesecake, Käsekuchen, with a delicious berry topping, Rote Grütze. The original recipe for Käsekuchen uses quark, but since it's not available in my town, I substituted it with ricotta. It tastes just as amazing! Make sure to chill both the Käsekuchen and Rote Grütze well before serving to enhance their flavors.
Rote Grütze Recipe:
• 500 g of berries (you can use any berries of your choice)
• 100 g of sugar
• 333 g of cherry juice
• 4 g of vanilla sugar
• 15 g of cornstarch
Käsekuchen Recipe:
• 100 g of butter at room temperature
• 120 g of sugar
• 3 eggs
• 100 g of vanilla sugar
• 500 g of quark or ricotta
• 40 g of semolina
• 20 g of cornstarch
• a pinch of salt
• 1 tsp of baking soda, quenched with vinegar
Bake in an oven preheated to 170 °C (338 °F ) for 30-40 minutes
