My tips for making Royal Icing (hard icing) for Guyanese Black Cake. In Guyana and the Caribbean we make a black rum fruit cake and we prefer to ice it with Royal Icing which makes a hard crust. In this video I share some of my tips and tricks on how to make and ice your black cakes this holiday season or anytime of the year.
Royal Icing Recipe:
1 lb confectioner's sugar
3 level tablespoons of meringue powder
1 tablespoon lemon juice
5-6 tablespoons water (depending on consistency required)
