Kitty you are such a breath of fresh air, I love watching you. I recently lost my husband of 45 years. Baking has always been a big part of my life. Cooking for 1 is hard and lonely. I found your videos and after watching you I instantly went in a baked a cake and some cookies. Of course I can’t eat all that myself so I shared with my neighbors. They were delighted and can’t wait for more. It warmed my heart it such a way I can’t explain. I ordered your book and a new kitchen scale, cant wait for the Amazon man today. Thank you Kitty you really brightened a very dark part of my life. Please keep posting and God bless you and your family.

Hey kitty, great video. I did chuckle about the ovens hear everything, it's bloody true! I've been in baking for 40 years now and couldn't agree more about expanding too much. I've seen the stress and problems it causes with staff,equipment costs etc it breaks people in the end. Bakery work is hard. Keep it simple is one of the best phrases I've heard. Keep doing what you are good at ,vary it like you do but as long as you are making a living out of it and making people happy that's all we need in the world. Your infectious passion actually makes me smile with pride, that a 19 year old is loving baking. Great stuff 👏

Hi Kitty--Gluten Morning from a 77 y o subscriber in Seattle, WA, USA. Thank you for such an inspiring message. But I'm not sure I should thank you because after feeling inspired I also have a crazy craving for crusty sourdough bread and sticky pecan buns. On the other hand, a video about making nutritious salads wouldn't be as much fun. Keep those sourdough starters fed and your charming and infectious smile. You're a great way to start my day. (Where's the garlic bread with tomatoes, parsley and gooey cheese?)

I know several "Masters Bakers" (people who are 50-60+ years in this job) and all of them have passion, honesty and generosity....bakery is an amazing world. Great video¡¡

You touched on so many things in this short video that I needed to hear. I'm in the beginning stages of opening a bakery out of my kitchen, and my goals seem similar to yours: I don't want huge growth, just something that I can keep small to make goodies to make people happy. I also want to eventually branch into community work, donating time/money/product to local organizations; your having your own non-profit for this purpose is amazing! The thing I needed to hear most of all, though, was "Think of yourself as your bakery's most important asset." I knew that I need to watch out for burning myself out, making sure I take breaks and days off, making sure my menu isn't too big for me to handle on my own, etc. But the way you put that particular sentiment was the piece I was missing: my mixer, my oven, my other equipment, my ingredients--all absolutely important, but they aren't going to do anything for me without me. So thanks for putting this out there! Definitely saving this video to watch again later if I need the reminder!

I'm so glad this is working out for you. I have a background in baking and cooking. I have had my share of businesses in food service. I tried exactly what you are doing, filling a van and selling to customers. It was very hard. There are so many laws to follow in the US. I needed permits and licenses. Way too much for me. Im retired now but my heart says oohhh I want to try that again!

Kitty, I couldn’t resist after seeing your videos and the amazing variety of buns you make. So my wife and I drove for two hours today to buy some of your produce. I LOVED your Jalapeño and Cheese buns 😋 they were amazing. My only regret is that I didn’t buy more. We also bought other buns and bread and your father gave us a ciabatta loaf for the long journey we made. Thank you all so much. It was worth the trip. ❤

Best medicine for depression… sharing and you do that perfectly. When we come out of the selfishness zone and individualism that our modern society helped build people flourish. Bread and the warmth of the kitchen always bring people together.

I have so much admiration for your determination and self-discipline and inspiration! My favorite tastes - salted caramel (of course!), curry with coconut cream, and pumpkin pie spice mix ( cinnamon, clove, nutmeg, ginger and allspice) You might look into five spice powder for a chinese inspired stuffed bun. Pomegranate molasses is so delicious as well- a lovely fruity blend of sweet and sour.

Absolutely.. You are the key asset of your dream which will always try to spin out of control. This goes for your RU-vid and social content creation as well. Many burn out from lack of discipline. I love pizza making myself. Developing flavors and textures while maintaining consistency is the challenge and the key.
