You shouldn’t stop the sap flow to the front pan when boiling everything should be open also lower your sap level it’ll boil better

What? Interesting. You are running the evaporator using a plug between the flue pan and the syrup pan? This is new to me. Is this the only/ best way to finish syrup on a rig of this size? I’d think most would just draw off early n finish separately over propane. Is this raw sap or has it been ro’d ?

Good questions! What I'm finding as I run this evaporator is there is no significant sap concentration gradient between the flue pan right side (when your sitting in front of the door) and the syrup pan. There is just too much tumultuous boiling going on in the flue pan. So after I know the sap is boiling at about 214 degrees I start the process shown in the video so I get closer to syrup (we pull off at about 218 degrees). With that said, you could certain pull off more earlier and do on a turkey fryer. I would think it would take longer as the surface area in a pot, combined with the volume would slow down the evaporation rate. This sap has not been RO'd.
