So ... first, a mea culpa. Like many uncivilized bachelors, I sometimes eat over the sink ... or on the couch ... or in my home office. And, while I don't always eat over the freakin' stove, apparently I thought it would make for good video. In retrospect, that is not great for camera work nor does it engender "sharing is caring" with extra soup. Doh!
Despite my heathen ways, this is a really tasty rustic Italian soup, with smoked sweet Italian Sausage, baby Yukon Gold potatoes, heavy cream, chicken stock, and lots of savory spices. This version is an impromput riff on a soup I typically make whenever the weather gets chilly down on the Texas Gulf Coast ... and this "Italian" modification just made it into my regular rotation.
Ingredients for Rustic Italian Soup with Smoked Sausage & Potatoes
- 3 lbs. Baby Yukon Gold potatoes (quartered)
- 2 lbs. sweet Italian Link sausage, smoked and cut into rounds
- 1 lbs. ground hot Italian sausage, sautéed and crumbled
- 1 qt. chicken stock
- 1 pt. heavy cream
- 1 pt. half & half
- 1/2 small onion, minced (can substitute dehydrated and/or onion powder)
- 1/4 cup parsley
- 3 tbsp garlic paste (about six cloves, mashed)
- 2 tbsp salted butter
- 2 tbsp white balsamic vinegar
- 2 tbsp Aleppo pepper flakes (can substitute red pepper flakes)
- 1 tbsp kosher salt
- 1 tbsp black pepper, freshly ground
- 1 tbsp dried thyme
- 2 tsp dried Italian oregano
