I just made goose bites last night. Cleaned up the breast good, cut all the silver skin off, sliced them across the grain into thick strips them cut into chunks. Hit em with meat church holy gospel rub, some brown sugar and a little washyer sister sauce in a ziploc, let marinade for about 8 hours or better, cut a pound of bacon in half, wrap, toothpick, grill and it taste just like steak!!!
