Ingredients for Sabudana Tikki: - Boiled Potato: 2 pc - Sendha Namak - Peanuts: 1/2 cup - Cashew: 8 pc - Sabudana: 1 cup - Ginger: 1/2 inch - Green Chilli: 2 pc - Handful Coriander Leaves - Mint Leaves: 1 tsp (Optional) - Pepper - Amchur: 1/2 tsp - Sugar: A pinch - Nutmeg: A pinch (Optional) - Lemon Juice of half a lemon - Oil Ingredients for Chutney: - Handful Coriander Leaves - Handful Mint Leaves - Ginger: 1 inch - Green Chilli: 4-5 pc - Amchur: 1/2 tsp - Roasted Cumin Seeds: 1/2 tsp - Lemon Juice of half a lemon Recipe: 1. Boil the potatoes in hot water with some salt. 2. Roast some peanuts and cashew in a pan. Remove their outer covering and crush them roughly. 3. Wash and soak sabudana in water for 4-5 hours. 4. Take a bowl, add soaked sabudana, green chilli, ginger, coriander leaves, pepper, sendha namak, amchur, a pinch of sugar, nutmeg, crushed peanuts, boiled potatoes and lemon juice. Combine everything well. Tip: If your batter has a lot of moisture, keep it aside for some time. The sabudana will soak the moisture. If the tikki still breaks while frying, add some arrowroot powder. (1-2 tsp) 5. Vrat-Friendly Pudina Chutney: Coriander Leaves, Mint Leaves + Ginger + Green Chilli + Amchur + Sendha Namak + Roasted Cumin Seeds + Lemon Juice 6. Take small portions, form the tikki shape and shallow fry in oil until golden brown. Serve with chutney and enjoy!
