And even after watching this and touting the safety lessons herein, I had a still mishap this evening. Using an air still, the still had just produced the heads, and it burped lifting the cap/condenser...My reaction was to shove the condenser back down to seal it...What a mistake, it apparently continued to build pressure and then lifted the condenser again, and covered one kitchen wall in wash containing red wine...it blew out 3/4 of a gallon. It was funny to see and I kept laughing for the next 3.5 hours cleaning the mess up. Still funny, but now I have to paint the kitchen.

yes methanol can be concentrated in distilling if you're not careful. it boils at 145 F so you need to run the still a bit above that heat (but below ethanol's boiling point of 172 F) for a little while and throw away what is pulled. i know you said you throw away your first few shots for taste, but if you leave them in it really can contain enough methanol to kill you, if you drank enough. check out ChubbyEmu's channel, he's a doctor who has a video describing in detail a case of someone who didn't deal with the methanol properly while home distilling and ended up having seizures and almost going blind. it can be dealt with safely but it's totally wrong to call it a non-issue.

@StillIt

1- kinda depends on your sanitation practice. Outside of that much after 3-4 weeks on the yeast cake can start to give funky flavours due to the yeast cells bursting. 2- acid bath then vinegar run then sacrificial alcohol run is the full deal.

So historically we did not have an accurate way to keep temp at one point in real time but with the advent of electric heat we can now keep a boil at a certain temp, all that being said I did some research and found that methanol boils at 65c and ethanol at 79c. So my question is can you set temp at 65c and boil off the methanol or will the still just keep running even at that low temp?
@tjoloi
@tjoloi 3 года назад
I know it's been 7 month, but better later than never. Methanol acts the same with ethanol than water, ie it mixes together when evaporating. I don't know how it works in high volumes but, I've done some wine distilling in chemistry class. What we've seen is that the temperature of your vapor will climb very fast until it hits a soft ceiling around 65c where it will still climb, but alot slower. That's when the methanol boils. Then it will gradually climb up to 79 where it will hit another soft ceiling. During that time, you'll be boiling methanol, ethanol and probably even some water. (The higher the temperature, the less methanol is remaining) You can't 100% get rid of methanol, there will always be traces of it in the distilled alcohol if it was present in your original product, the same applies for water. That's why it's impossible to distill to 100% alcohol and hard to distill over 60%. One thing to keep in mind, ethanol is the cure to methanol poisoning. Your body uses the exact same process to metabolise both alcohols and ethanol is picked first, which means you body has more time to get rid of methanol through other means (mostly pee) without metabolising it. So, what he means by "methanol is not a worry" isn't always because there isn't enough methanol to hurt you, it's because there's almost always enough ethanol to counter it. It's true for almost every mash, the only one I'd be weary is cider since apples is one of the fruit that have the highest pectin content, which ferments into methanol. Even then, it may only be a problem if you're doing applejack or not getting rid of the foreshots. Disclaimer: My chemistry project was done with fractionnal distillation (think column still), it may not act the same with a plain old pot still

metanol is not a boogeyman😬 ditilling abolutey does concentrate the fractions. i absolutely disagree that foreshots are good for anything besides tipping down the drain. If you drink heads you will get wicked hangover. if you drink foreshots you absolutely could die. storing up foreshots for cleaning is just a bad idea and completly different thing to keeping heads. I 100% promote 4 fractions cuts, fores /heads/ hearts/ tails. fores goes down sink. heads for cleaning. hearts for drinking. tails for compounding flavour if thats that what floats your boat. but the notion that fores cant harm you because there is the same amount of methanol in a wash is dumb. there maybe a lethal dose of methanol in a wash but you have to drink 15l of a 30l wash to ingest a lethal amount of methanol. after distillation you compact/concentrate that amount down to 2litres. so insead of having to drink 15l of the 30l wash to get a lethal dose you only need to drink 1l. make sense? loved this channel till now but blowing off the dangers of this hobby not cool jesse, dissapointed......
@StillIt

Berries and fruits create more methanol then sugar or grain. It got it's bad name during prohibition when moonshiners would put one bottle of pure methanol into each case to prevent getting robbed. Methanol as comes of as the first part of the run is most definately extremely dangerous to drink and will make you go blind and lapse into a coma and you will die if you drink 50ml of Methanol or more, this was the first thing I learned during my master distillers class, a sugar wash might not have methanol but any grain and fruit will most definately have methanol, the golden rule is to discard at least 30 ml for every 20 liters in your still. The reason methanol is so dangerous is that your liver and kidneys does not recognise it as alcohol, if you accidentally drink a bit of methanol, first aid is to immediately drink at least 50 ml of any normal alcohol to kickstart you liver and kidneys which will then also break down the methanol, methanol comes of the still first due toma lower boiling point
@BigEdsGuns
@BigEdsGuns 5 лет назад
There is more methanol in orange juice than in most store bought alcohol. Small amounts of methanol are collected throughout the entire run. It is however highly concentrated at the beginning of the run. But on a hobby scale, there is not enough methanol to kill anyone. Still (sorry pun) DO NOT consume it. I am just pointing out that a 5, 10, 15 even 30 gallon boiler will not concentrate enough methanol to kill someone. Commercial distilleries with huge boilers and continuous stills are another animal. Where gallons or barrels of methanol are collected. Hence the allure of small batch hobby distilling. Drink a good hearts cut and there is NO HANGOVER, none ZERO. In my book keep the yeast happy and they produce an excellent drop.

@NoJusticeNoPeace
@NoJusticeNoPeace 3 года назад
I make applejack the traditional way, through freeze distillation, and we know from historic accounts that it is entirely possible to go blind and even die from consuming large amounts of applejack. First, you're using the whole apple, which means lots of pectin and so produces lots of methanol. Second, freeze distillation keeps all of the heads, which makes it particularly dangerous. So I'm always cautious about how much of it I drink in one sitting. One glass won't blind me, but a gallon jug of it might.

Just as a heads up Jesse, the idea that because the wash is safe to drink therefore the distillate is safe is slightly dangerous. The wash is safe to drink not only because of the large amounts of relative water that dilute the methanol but also because the ethanol comes with it. When metabolized, ethanol gets converted into ethanoic acid or acetic acid (i.e vinegar) whereas methanol gets converted into formic acid. Long story short, formic acid is a strong neurotoxin, hence the saying "The 'M' in methanol stands for 'makes you go blind'", but it doesn't bind very strongly to the brain ethanoic acid on the other hand can actually prevent this toxicity and thus the wash is safe to drink as it has a mixture of both. If you were to drink the foreshots and only the foreshots, you would probably have the worst hangover of your life, for the rest of your short life. This also said adding the foreshots to your cuts is also generally a bad idea due to the fact that it can persist in the body for some time and unless you are planning to be drunk for 48 hrs straight it can still be very dangerous. Don't mean to be rude, just want to inform people about the risks that come with producing "safe poison".

Spoken like someone who’s never had methanol poisoning. Methanol poisoning is a real danger and should not be discounted Always distill in a well ventilated area, methanol vapors do come out before your condenser starts working and they smell good, most cases of methanol poisoning are caused by inhalation in industrial situations. Methanol is also absorbed through the skin so putting a few drops of for shots in your hands and smelling to make the cut ,not so smart. Remember it’s ppm and it builds up over time, if you happen to distill for days in a row this shit can build up and hurt you.

So should distilling only happen in a garage separate from your house? Or can it be done in a basement safely?
@StillIt
@StillIt 5 лет назад
My biggest concern there would be ventilation.
@89emeza
@89emeza 5 лет назад
@@StillIt that's what i figured, I'd assume the fermentation process wouldn't be too much of an issue. the heating and distillation is what would need a pretty good ventilation system correct?

In sugar and grain washes and mashes there is almost NO methanol. If you ferment fruit caution needs to be applied, as fruits contain pectins, ergo methanol in your wine.

Advice.. if you DONT really need to distill, dont lol If youre going to be happy with Wine, or beer, go for that instead. It really is dangerous, and just not in the obvious ways. Beer is probably more involved if you go all grain too, so have fun with it lol

I use propane outside. with a kiln heat tile separating the two. Copper still, that new stick silicone seal tape works great. to seal up.

Hi. I’m watching you videos for newbies. I have a 3 gal SS still. It has copper and brass tubing connected with brass fittings at the still, thumper and condenser. I’ve heard that brass in not good for water at all so not good for distilling. I know it’s ok for water and I’ve also read it is fine in a still. So what is your take on it. If not good, is it just a matter of trying to find SS fittings to replace the brass? Thanks

I have a problem with the don’t worry about methanol statement. Sugar won’t produce much methenol, and grain will only produce slightly more, but fruits can produce more methanol, and if you take the time to hold your “brandy” wort below 170F and you are producing condensate, then it’s likely acetone and methenol.

at 5:50 you say distillation cant create things and the chem eng in me as much as he wants to start typing wouldn't if that were true in nearly all alcohol distilling situations. But the dry distilation of cellulose creates methanol , people have died making grappa because they boil it dry and then keep collecting a flammable, clear , "hot" liquid off the still which among other things is methanol.
