What is saffron?
It is obtained by dehydration of its three red stigmas of the flower. The style and the stigmas are often used in cooking as a seasoning or as a coloring agent. Saffron, poetically called “Red Gold”, is the most expensive spice in the world.
The price of a gram of saffron can reach 35 euros, which is downright 35,000 euros for one kilogram. But saffron being very strong, for family cooking a single small gram can be enough for a year.
The plant is native to the Middle East. In Europe, it was first cultivated in the Greek provinces more than 35 centuries ago. Saffron is characterized by a bitter taste and a scent close to hay. Saffron gives a yellow-gold tone to dishes that contain it.
These characteristics make saffron a highly prized ingredient for many culinary specialties around the world, especially in Persian cuisine. Saffron also has medical properties.
The name of saffron, safranum, comes from the Persian Zarparan. Zar meaning "gold" and Par meaning "feather", or "stigma".
