In this Salesforce Flow Tutorial we use a scheduled triggered flow and a flow builder loop to count the number of contacts related to every account in Salesforce, and then update a field on the account record. This is a real example of using Salesforce Flow to loop through records and count the number of loop iterations, therefore counting the number of contacts, and rollup that number to the account object.

Personally, I don't think so. Any time we can use standard roll-up summaries I've found they're less maintenance and therefore easier to work with than automation. I've been in environments where all rollup summaries where in use e.g. hitting the field limit for the field type, so we needed another approach. In that scenario this would be a good fit.
