INGREDIENTS
A bushel of parsley
A bushel of cilantro
1 red bell pepper
½ green hot pepper
7 garlic cloves
1 medium size red onion
½ cup olive oil (4 foz/120 ml)
⅓ cup balsamic vinegar (2⅔ foz/80 ml)
1 ½ tablespoons dry oregano
1 teaspoon salt
1 teaspoon crushed black pepper
INSTRUCTIONS
1) Put all the vegetables and greens in a food processor.
2) Pulse-chop several times until the ingredients are well combined.
3) Add the olive oil, balsamic vinegar, and spices then pulse-mix a couple of times. If you don’t have balsamic vinegar, use regular vinegar.
4) Alternatively, you can do the previous step manually in a mixing bowl.
5) Transfer the sauce to a serving bowl for use.
6) You can keep the leftover chimichurri dressing in a tightly closed container in the fridge. You can also store it in the freezer.
