Salt and pepper shrimp 椒鹽蝦- How to cook (the best restaurant style)

Salt and pepper shrimp 椒鹽蝦 is a main dish for the Chinese banquet, or as an appetizer when serving in a smaller quantity. Apart from the fresh shrimps, Sichuan pepper salt is the key ingredients which provide the unique flavor of this dish.
When we cook salt and pepper shrimp, we are eyeing for the flavor, and you need to put the healthy aspect aside to enjoy as we need to deep-fry the shrimps.
It is perfect for serving during a celebration, special dinner for guests, party, etc., Your guest will enjoy a distinctive numbing flavor of Szechuan peppercorn, with shrimp meat that is bouncy in texture and toothsome, and the shattering crisp shrimp shell that you can eat it while it is fresh from the wok.
RECIPE:
Ingredients:
500g shrimps
3 Tbsp cornstarch
3 tsp salt
2 tsp Sichuan peppercorn
2cm ginger, coarsely chopped
4 cloves garlic, coarsely chopped
2 stalk of scallion, the white section only, coarsely chopped
1 red chili, coarsely chopped
Oil for sauteing and deep-frying
Method:
- Clean the shrimps. Trim off the legs and tendrils. Do not remove the shell, and leave the tail intact. Deveined.
- Drain in a colander, then pat dry with a paper towel.
- Add some cornstarch to coat the shrimps right before deep-frying.
- Deep-frying with hot oil near to 200°F/390°C for about a minute. Remove
- Put the salt and Sichuan peppercorns in a pan and toss it over low heat. When the salt starts to change to light yellow (about three minutes), remove. Use a spice grinder or mortar and pestle to grind it to become powder.
- Saute the garlic, scallions, and ginger with oil.
- Combine the aromatics, the deep-fried shrimps and three-quarters of the salt and pepper mixture in the wok. Have a few quick stirs and flips. Serve.

Added 1 1/2tsp salt 2tsp Si Chuan pepper..salty for us..maybe 1/2 tsp salt or 1..best part is deep fried with cornflour 😋

Great video! Salt and pepper shrimp is one of my fav Chinese dishes but it's hard to find places that do it well. I like when it's really crispy and seasoned like this. Thank you for the recipe!

Mr. Kwan, I had shrimp in my freezer and Szechuan peppercorns in my pantry so I made the Salt n Pepper Shrimp last night for dinner; I just couldn't wait another day; it was so very delicious! Next, I'll try the Chinese Sausage Fried Rice, when I go shopping I'll get the sausage. I've never bought Chinese Sausage so I don't have any in my fridge else I would've also made it last night. These two dishes are my all time favourite; I'll let you know as soon as I make the Sausage Fried Rice. Thank you so very much Mr. Kwan, God bless you 🙏 This is an update; today I made some more Salt n Pepper Shrimp and the Chinese Sausage Fried Rice for my Sunday lunch and it came out perfect! I’ve eaten this a bunch of times at a local buffet. Unfortunately, it’s about an hour and a half to an Asian grocery store that sells head-on shrimp. Since the flavor is dramatically better when the head is eaten, I don’t get to buy head-on shrimp very often. But now, I’m thrilled to have this recipe. I guess I should also buy some Sichuan peppercorns the next time I’m at that store. How much different are the Sichuan peppercorns from ordinary American ones? I subscribed so that I can get more recipes from you. Thanks!

Szechuan peppercorns have a tongue-numbing feeling, which is unique. Suggest buying Szechuan peppercorn powder so that you don't have to grind it yourself.

The shell protects the meat from the direct heat of the oil, thereby keeping the shrimps from overcooked and getting too dry during deep-frying. It may not be that good if you remove the shell before deep-frying. I have included more details in the blog post. The link is in the description below the video.

@@GolDreadLocks Do not remove the shell so that it looks good on the table. I know some people even eat the shell! (only when it's so crispy immediately after frying) I am not a fan of shell so I remove it before eating.
