White beans simmered with onions, salt pork and thyme till tender.
Bring a quart and a half of water to a rolling boil.
Pour 1 1/4 cups great northern white beans in. Cover and allow to boil five minutes, then turn heat off and allow beans to soak in the hot water for an additional hour.
Slice the rind off a few ounces of salt pork, slice thinly and put into a bowl covered with water to soak. Removes most of the salt.
Drain beans and inspect them.
Cut the salt pork up, place into a pot with a tablespoon of bacon grease.
Add 1/4 - 1/3 cup diced onion. Allow to cook a few minutes.
Add one clove minced garlic and cook a minute.
Add four cups of low sodium chicken broth.
Place the drained beans into the pot.
Add 1/2 to One (1) Tsp dried Thyme
Add One (1) Tsp dried Parsley
Add 1/4 to 1/2 Tsp liquid smoke.
Add a pinch or two of ground black pepper.
Mix.
Allow to come up to a slight simmer, cover and simmer a few hours until beans are tender.
Once beans are tender, smash some of them with a spoon along the side of the pot and mix in to thicken the beans. If a much thicker bean broth is desired add a corn starch slurry.
Jalapeno cornbread
Mix the following
One (1) cup of cornmeal mix (with the self-rising flour)
Two small, chopped Jalapenos
1/3 cup Cheddar cheese.
Add 1/2 whipped /beat up egg
Two tablespoons of cooking oil
Pinch of sugar
Few sprinkles of Cajun/creole seasoning
Milk or buttermilk until cornbread consistency is achieved (around 3/4 cups)
Fill muffins pan and bake 450 for 20 to 30 minutes until golden brown and crispy on bottom.
