One thing my brother and I loved from warm crusty freshly baked bread - was cutting in whilst still warm and having butter melted through it. Absolute bliss! In fact half the loaf was gone before our parents even realised 😋😋

John, I have never in my life, made a bread this soft and delicious. I consider myself a pretty good cook and baker, but my one downfall has always been breads, and that has frustrated me! I want to thank you for your amazing tutorial and guiding me through….I made the best bread I ever had - I think it has everything to do with the correct hydration, which I have NEVER realized before. So now, I will watch each of your videos to learn more! Thank you very much Chef!

John, after about a year and SEVERAL loafs, I finally hit the motherload with this week's loaf!!! Absolutely perfect. A soft baked crust and warm soft interior that was perfect for sandwiches and French toast. Thanks again!!!

John, I sure enjoy watching your videos and thankful you take the time and effort to share your skills. I purchase very little premade foods as I like to know what I'm eating, plus the satisfaction I get as I enjoy cooking. I even grind my own meat from primal cuts! You explain everything so eloquently and calmly, and keep it as simple as possible. The world needs more people like you. BLT's for dinner tonight and yes, I cure/smoke/slice my own bacon at home.

Thank you for sharing this. I was very pleased with my first loaf using your recipe and techniques. The only difference is I used all purpose instead of bread flour. But the loaf came out very well. Nice, light texture. Lightly browned but still cooked. We had done warm with butter and it was very tasty and had a great mouth feel. My wife and I agree that it's going to be a very good sandwich bread or toast. Might be time to reconsider store bought bread. As you said, it only took a couple of hours, and most of that was waiting. I work from home and this is the perfect bread that I can make while still doing my day job. I can't wait to get some fresh yeast and bread flour.

I have tried perhaps six sandwich bread recipes. Some requiring a mother , some requiring lots of butter and milk. They were all ok. I must say , once again, thank you for the recipe and instructions. I made this loaf two days ago. It was not difficult and produced excellent sandwich bread. I will now add this , along with your other recipes to my “ go to “ list of yumminess. Thank you again ( as I type this , the final proof for Ciabatta rolls is occurring. They are so great I was forced to make a double recipe. :)

Hi John. Just to say i have just used this recipe to make homemade pizza, and have to say it's my best ever. The crust was so light. I split the made mixture into 3 after leaving to rise in the usual way and have frozen 2/3 of it. It makes 3 x 12 inch pizza's. Marvellous. This is now my one and only pizza dough recipe. Lovely. John, I thought of you today and wanted to say a big THANKS! Yesterday afternoon I baked your loaf for my younger brother and his wife. They loved it! This a.m. I opened my bread wrapper and there were only TWO slices of my store bought bread left! I am now able to knock out your bread in 2 hours, like you said! Yes, I made another loaf today for my sandwiches and for my wife for her toast. Just a sincere thanks to your video! Keep 'em coming, please. We love your bread.

Hi John I have been baking the 100% wholemeal no knead loaf for a few months now and so I decided to try this sandwich bread for a change. Made this sandwich bread few times and i must say, this is by far is THE BEST SANDWICH BREAD recipe. Taste good, soft and not crumbly like other recipes that i tried. Goes well with butter and strawberry jam. Fantastic! Thanks for the recipe!

I've made this twice now...utterly superb ! Soft and fluffy....nothing like the crap out of a bread machine... this is delicious bread ! I used a big wok, to hold the bread tin..the curved surface of the wok allowed a gap between the water and the tin.....then covered it with a bowl of the same diameter.... There's nothing like making home made bread, that tastes and looks like bakery bread :) life changing really...can't thank you enough ! Hope you're enjoying your holiday :) All the best........

I made this bread and 1. It did not rise as much as yours and I used a brand new yeast to make it 2. The bread crust was chewy I think it's because I left the top heating rods on.... I have an otg (Oven Toaster Grill) and it works with some heating rods at the top and bottom...

I've just tried this making this loaf and followed your instructions to the letter. I'm used to working with a little more hydration when baking bread and I did get a little concerned when pulling the dough together at first, but I persevered and it all came together beautifully! My kitchen was a little cooler today so the proving took a bit longer but the end result was a cracking loaf! I even buttered the tin which I don't normally do and I think this really helped towards getting a crispy bottom! hahaha! The taste and the compliments were great and this easy little all-rounder loaf is now going to be a regular for sure. Thank you John!

I know this is sacrilege John, but I jut tried this exact recipe in our old bread maker for time reasons - it came out perfectly! Not every recipe works in it so I have dumped it until this point and make manually. Just thought you should know this genius recipe also works in a breadmaker. Thanks! (all liquids in first, flour on top, salt and sugar in opposite corners and yeast in a well in the centre)

Hi John, I was going to post my comments on your latest great video, but this is where it's relevant. I hate you! (Only joking, read on...) This recipe works fantasticly well and I have been making it every other day for the last few weeks. I have to, family won't touch the sliced stuff anymore! First one didn't work out very well, it was quite dense and just about 'ok'. Similar to my previous efforts. Toasted, it was a struggle to eat the following day. Second one I left to rise for a lot longer in the tin (tip here: use the timer as a guide, it may well take twice as long) until it looked like yours, and omg, wow! Having made this a dozen times now, this is an absolute keeper. I know how to "tiger crust" it, but to be honest, for a general purpose sandwich/toast loaf it is a winner as it is. So now I have to spend a couple of hours a week to keep making this. Arghhhh 😉🤣 But a huge THANK YOU JOHN, it definitely gets the thumbs up from us 👍🍻

Thank you for the videos and the tips, John. A couple of queries: What if I want to substitute the strong bread flour with whole wheat one for a healthier choice? Would the amount of water be the same or the ratio change? Also, what is the hydration ratio that applies to other breads -is there any guidance on that?

I do use a machine sometimes but it is much more satisfying to knead the dough by hand. It's so nice feeling it change from a dry, flaky consistency to a smooth, stretchy one. Lovely video, John :)

Hello John, this is great bread. I make a loaf to this recipe every Monday. It is so good but for some reason, after I put it in my electric toaster the bread has a strange texture, It becomes close-grained with an almost brittle finish, it's as though the gluten melts. I know you'll say it's about accurate measurements but please be assured I am meticulous when following any of your recipes. I was given a sandwich at a friend's house recently and was surprised to discover it was made from a Waitrose Soft White Medium Sliced. Can I make such bread at home? What is the secret to making a white loaf that's perfect for toast, please?

Hi Bill. I've never really had a problem when toasting the bread. Also mass produced store bought bread has a lot of other ingredients to keep the breads shelf life longer and to keep it soft.

Hi Bill, I make this bread all the time and after 3 days on the counter I slice and wrap each slice individually with saran wrap and freeze in a freezer bag. Take out a slice at a time for toasting or thaw out for sandwiches. Hope this helps. Works perfect for me.

I’ve made a few of John’s recipes since stumbling across the channel a few months. I’ve very little experience in the kitchen but found John’s recipes easy to follow. The bread has got me stumped though, mine just doesn’t rise in the oven. It doubles in size on the first proof, and rises on the second (although not quite as much as in the video) but once in the oven it doesn’t really get any bigger. Tastes absolutely fantastic though!

Thanks for watching Graeme, much appreciated. Check out the 4 main bread making rules below, see if you can improve anything (no pun intended). But the first thing you should try, is to use bottled water instead of tap water, the chlorine in tap water severely weakens the yeast. 1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results. 2. Use digital SCALES for all of the measurements including the water, don't convert to cups or measuring jugs, they are too inaccurate. 3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread. 4. My partner suffers with terrible heartburn whenever he eats any kind of bread product and it's costing a fortune in heartburn remedies, not to mention the sodium he's putting into his body, we wasn't sure if it was the gluten or maybe a preservative or other ingredient that's been added to store bought bread, I decided to try and make my own bread and chose this recipe, it's been great, I've now made 4 or 5 of these sandwich loaves and my partner is very happy, no more heartburn so it possibly was something that's added to the bread, thanks John, I've since made some of your other bread recipes too, they also taste much better than shop bought

heartburn comes also from being acidic in body have the 80/20 or 70/30 rule, and it will get better! Any kind of sugar, Flour, Meat, Milk and so on are acid, while greens, Veggies and fruit are base that's how I cured me so, 70 pro veggie and fruit, and 30 pro of the rest. and looots of water, no soda, reduce of coffee and it will be a different in quality of life

Thank you SO much for sharing this bread recipe. I have been looking for years for the perfect all around low temperature baking bread. It is delish as sandwich bread, the perfect amount for my small family. This recipe also makes 10 to 12 hot dog buns or 8 average hamburger buns. My family loves it!

I made this loaf today, following the recipe to the gram, and I must say I am thrilled with the result. A perfect sandwich bread! Lovely and soft, not dry at all, great texture, and equally good as it is or as toast depending on what you prefer. Thanks for sharing this fantastic recipe 👍 (P.S. I needed about 45-50 minutes for each rise but I did not use the warm water in the sink trick and made do with my airing cupboard, which probably explains the longer time).

The minute I saw this video I knew I had to try it. I've never made bread before but thought I'd give this a try. I was able to find the King Arthur flour in my grocery store and on the front of the bag it said "12.7 g of protein" so I knew I had the right flour. Anyway I made it tonight and was so very pleased with the results. It was wonderful. Thank you so much for such a detailed video. I will definitely be making bread, using your recipe, from now on.

Hi John! Just tried this recipe (doubled the sugar) and it works great (: bread is soft on the inside and crusty on the outside. I will take note however to be more thorough in getting rid of the air before the final proof - my loaf had a sizeable air bubble near the top of the loaf. Looking forward to trying this again!

John I have watched about 5 of your bread videos and For the first time I am getting how bread textures work by kneading. I think the wet hands thing is brilliant rather than adding flour to your dough and changing the mix use water that would evaporate into the air. All the videos are well produced and I do own a kitchen aid pro 600 mixer so if I am lazy I can cheat and do it fast. Everything you make looks great ,I love the little tips in every video, I build transmissions for a living (35 years) so I never had time to learn the things you did lovingly creating such fine baked goods. I have subscribed and liked all your videos keep up the good work.

John, great tip on proofing the loaf in a container submerged in warm water. I have found that putting the loaf in the oven with the oven light turned on works well too. Of course, your oven has to have an incandescent bulb and not an LED. Running the clothes dryer for several minutes and then putting the loaf in works well also.

Hi John. I have been cooking and baking for years, but bread making is relatively new to me. I did try it a few times with varied success, but have really been bitten by the bug of late (The only other time I've had success with yeast bread was following some of Nigella Lawson's recipes. Every other recipe seemed to go kaput). Generally I just make soda bread, but yeast bread is my new passion and, in large part, that is thanks to your videos. Your little tips and tricks are just brilliant. It's pretty much like having a professional baker in the kitchen with me to guide and advise. Thanks so much for your videos. I haven't bought shop bread now in weeks. :D

I enjoyed the step by step procedures and instructions especially that conversion principles of the 57% mathematical rule. I never thought of such. Moreso, you have indeed opened my eyes to the usefulness of using the scale to measure any ingredients as seen in the video. Thanks for the information.

Thanks for the comment, different breads have different hydration percentages, like my baguette video has a 74% hydration, ciabatta bread is even higher. I pleased you got something out of the video :) thanks for watching much appreciated.
