Interferometric Wide swath mode (IW), consists ofLevel-1 Single-Look Complex (SLC) products, where each image pixel is represented by a complex value and contains both amplitude and phase information that you can use.

You can save the data in SNAP take it to any software and do mosaic that will be better option.

Mostly for forest area I use ALOS PALSAR backscatter data means sigma value.

I was reading some articles and saw they suggest if you are using data from different orbits sigma won't be effective. and I'm going to use both 1A and 1B satellites in different dates and later I might need to use sentinel 2 optic data too. do you think it's better to use sigma nought or gamma nought?

Yes you can do that. You just try to do some indices to enhance the spill area. Then convert in in raster to shape file. Finally select all spill polygon and extract the area in arcgis pro .

I am taken it in arcgis pro then I subset it. but here better you can use subset-ed dem to subset the image.

You can save this data in .img inside SNAP then you can open it in QGIS and convert it raster to polygon.
