Sausage And Peppers Recipe Glen And Friends Cooking
Today you get to watch Glen cook a vaguely Italian sausage and peppers recipe... As he says in the video, "If you have sausage and you have peppers, you have fulfilled the mandate". Pretty much meaning that this could be a sausage and peppers recipe with tomato sauce, or sausage and peppers no sauce. You could use any sausage that you like, any peppers or other veg that you like.
Ingredients:
1 pound (500g) Italian sausage
2 Tbsp (30 mL) extra-virgin olive oil
1 large red onion, sliced
3 assorted bell peppers thinly sliced
1 bulb fennel trimmed and sliced
2 hot banana peppers, sliced
Salt & Pepper to taste
3 cloves garlic, minced
½ tsp (2 mL) red pepper flakes
Scoop of Peperoncini Piccanti
1 tsp (5 mL) oregano
30 mL (2 Tbsp) tomato paste
½ cup (125 mL) white wine
Handful black olives
Method:
Slice the sausages into 1” lengths.
Heat olive oil in a large pan over medium-high heat, toss in the sausage and brown all over.
Remove the sausages, and add the onion to the pan and sauté until translucent.
Toss in the peppers, fennel and garlic; cook & stir until they soften slightly.
Add salt, pepper, oregano, red pepper flakes, Peperoncini Piccanti, and tomato paste; cook, stirring, 1 more minute.
Stir in ½ cup wine; reduce heat to medium, cover and cook until the vegetables are tender- about 5 minutes.
Add the sausages and cook through - another 3 to 4 minutes.

I worked in a Italian restaurant back in the mid 80’s here in New Jersey. We made it by cooking the sausage links ( sweet or hot Italian sausage ) whole then we’d slice the links on the bias , cook the peppers & onions in the sausage grease and then just before it was done we’d add a few tablespoons worth of marinara sauce to stir thru and finish before it went into a Italian sub roll.

In Greece, this dish is called Spetzofai. It originates from a mythical peninsula of Pelion (or Pilion). The place where centaurs run free and apples are grown next to the Aegean Sea. A truly magical place.

When I was a boy in Brooklyn, the sausage and pepper hero sandwiches were the reason we all went to the church feast every July. It was usually held for the feast of "Our Lady of Mt. Carmel": games, rides, and food. The food truck, they existed even in the 70's, would cook the whole coil of sausage on a flattop metal grill. Then they would cook the peppers and onions on the same spot where the sausage was cooked. All that went on a hero roll, and you were really in heaven.

Ah yes, memories of upstate NY and the sausage & pepper sandwiches. In my area sometimes called State Fair specials as what you describe were always offered at the NY State Fair.

My dad used to make very similar with smoked homemade sausage (cajun style) in winter after slaughter time, and just onions and bell peppers cause that's all we had. He cooked it in a cast iron skillet on the open fire at home outside. Thanks, y'all bring back wonderful memories.

I do sausage and peppers with German Bratwurst and Sauerkraut. The kraut brings all the acidity you need and binds it all together.

I like the way Glen perked up when he said a breakfast version. Breakfast sausage, peppers, some quick pickled onion from the night before, fried potatoes, and some scrambled eggs to help share the love between everything.

We love sausage and peppers with spaetzle. I make my own vinegars and wines. So I use those in my cooking instead of store bought. Very tasty.

I am an absolute sucker for sausage and peppers to the point where I need to tell people to stop me because I'll eat it until I get sick to my stomach, but I've never seen any complexity put into them like this. Great video Glen!

I make a West Virginia Italian sausage dish similar to this but I use "ketchup peppers" that are canned and sold by Oliverio's Peppers and it gives it a whole new profile and taste. Your recipe is outstanding, thanks for sharing!!

My Greek mother would make seasoned beef American football shaped meatballs that were rolled in flour and then pan fried. Those would great in this recipe! Also, I've made this using sliced white bratwurst sausage. Such a great and flavorful hash like meal!

I make this often, and I use a little sake in mine. I've done squash and zucchini. Haven't thought of using the olives before; going to try that next time.

This would make for a pretty good sandwich, get your self a large crusty baguette fill it with the sausage and peppers add some strong mature cheddar and your set.

I do a breakfast version with poblano peppers, red bell pepper, onion, spicy breakfast sausage. Add some cheesey scrambled eggs and I'm a happy camper :) Maybe some sourdough toast as well!

looks good ..we make sausage meal for breakfast close to this one with fewer ingredients . Sausage sliced into coins any flavor ,sliced onions and bells . Fry the sausage remove add onion and bells cook till soften slightly. Add 2 tbsp. of bq sauce mix then add the sausage back to the skillet .

I just made this but instead of tomato paste I used Gochujang and instead of vinegar I used the pickling brine from pickled asparagus. I never ended up using any broth since there was more than enough oil/grease left over - I probably used too much olive oil when I added the vegetables thinking there wasn't enough left over - so I made some rice with some beef base and mixed it in to help soak up all that flavor. I used very little salt so the extra salt from the beef base was just right. I ended up hunkering over the counter eating it from the container for lunch! I plan to add a couple eggs with it for when I heat some up for a meal.

My version of this is hot Italian sausage, potatoes, peppers, onions, garlic and mushrooms, and cubes of feta. I toss the vegetables and cheese in olive oil and season with salt, pepper, cayenne and oregano. Instead of cooking on the stovetop, I create a foil pouch in a baking dish, put the vegetables in, and then top with the pieces of sausage. Seal the pouch and bake in a 400° oven for an hour. The juices from the sausage "baste" the vegetables. I'm going to switch things up a bit next time, and substitute fennel and eggplant for the potatoes, since I need to reduce my carb intake. 😊

Speaking of a stir fry with sausage, something that my family came up with was something we called Polish Stir Fry- we use Polska Kielbasa as our sausage in the stir fry and serve with traditional stir fry veggies and fluffy white rice, and it’s to die for!

Excellent recipe I use Peppadew a trademark name for sweet piquanté peppers and they take it too another level. I consider Italian sausage & peppadew One of the best combinations around. Especially on pizza.

I do sausage and peppers or sausage, onion and potatoes somewhat regularly.. I also have a divine breakfast casserole with breakfast sausage cooked and crumbled, torn toasted croissants in the bottom of a buttered casserole dish, beaten eggs with milk and cream and shredded gruyere (sp?) cheese mixed in. Pour egg & cheese mixture over layered croissant pieces and crumbled sausage and bake.. it is fabulous! Last time I added sautéed mushrooms and spinach to it. I image cooked artichoke hearts would do good as well..

Don’t know if you get Mama Lil’s Peppers in Toronto (they are a local brand in Portland, OR), but if you can get them, they are great on so many things. I never liked brined or pickled peppers before we moved here and they were served on a slice, but so good! Also, I have never seen sausage and peppers with sausage that wasn’t a wurst, kielbasa or hot dog style (like if you served it on a bun). I want us to try it next time with a “crumble” sausage as you did here. Looks great.

You could also use chipotle in adobo and spicing to go Mexican inspired. Considering I have an open can in my fridge, sounds like I have a meal prepped.

Tomatoes and zucchini are the favorite in my house. Eggplant also works great. I love the peppers, but I've got a fussy eater that won't touch cooked peppers.

I’ve tried using sous vide on raw pork sausage, 2 or 3 hours at 60C = 140F. Nicely pre-cooked just as a hot dog is but tastier.

I sauté the peppers separately from the onions at a higher heat in order to get them like you would in a wok then i add everything together and mix it and serve.

When I’ve cooked this, I diced the peppers, axed the tomatoes and tomato paste. I then instead added gochujang paste and served it over rice.

I sometimes sub dry vermouth for white wine in recipies like this - especially if I think my vermouth (which I keep in the fridge) has been in there a bit longer than I'd like.

Glen, you are a smart guy with insight on media and marketing, what do you think about the oversupply of recipes and simply food ideas on yt? The thing that made me notice is that Orsara recipes made the same recipe, only it was a sandwitch. I know its just a few ingredients that you can spice up, so it comes to personality, habit of watching your favourite account and maybe looking for a recipe that suits you best. But we are basicly watching the same thing with some variations and different buildups.

Sounds like they way I do breakfast. I cook so many things like that, including steamed chard or kale with onions, nutmeg and cinnamon. At the last minute I fry a couple eggs to put on the side. Breakfast. lol
