@@NewbieBoiTM It makes it much easier tho for those viewin on a device other than a computer (or a phone); as they can easily get the description to pop up and click links in it, or they can type in the search terms usin a remote control with the worst possible on screen keyboard imaginable. This is mainly about ease of user exp which can increase the likelihood someone goes from thinking "oh, i wanna see that video mentioned" to actually watchin the video. If they can do it in two clicks, thats ideal; but instd it takes a ton more clicks and for some is needlessly complicated by shitty youtube exps on non-computer/phone devices.

Start it in a cold pan. You cook your sausages on too high a heat and don't give them time to set while expanding internally. Think smoked sausage style. Low and slow. Love you sausage king.

For homeade sausage, hanging it to dry in a fridge helps quite a lot as well.

I started making my own sausages because of these videos. I have a sausage freezer now. I’ve bought a smoker to make smoked sausages. I’ve been volunteered to make sausages for almost every family gathering until the end of time. My life has been consumed by the sausage.

@@michaelthompson2401 im concerned about the oil we would need to find a more viscose conductive medium thats edible and tasty at high temp (so you could use it upside down if you didnt get that part) no i got it you can cook in a air tight chamber filled with heluim so with the weight of the sausage skin it would sink onto the pan in not sure how much hot helium chsnges in density more testing required

This is so perfect. For a while I was bummed because on one hand I love the absolute brainlet sausages the just fucking “raw cinammon in a sausage casing” sausages and I missed them when he started mixing them with pork to make “mostly palettable” sausages But on the other theres a lot of initially memey sausages with lots of potential if he did it with the flavor being more of a… well, flavor, and not the entire thing With that said its time for dirt sausage regrind

It's not the pan, it's having the heat too high and not draining the oil that leaks out of the sausage. The liquid soaks back into the sausage making it gummy and causing bursts, just soak some up with kitchen paper or drain it out if the thing starts to flood

Neither the pan nor the ingredients, it’s the fact the sausage goes straight from the production line to the pan. Either let it rest overnight in the fridge or smoke the sausage to draw out the extra moisture.

When you fill the sausages, pull the casing off the filler slightly faster than it pushes off by itself. This will reduce how stuffed the casing is and leave some room for expansion during cooking.

Leave the sausage uncovered in the fridge overnight to allow the casing the dry out. This can help with gummy skin.

5:34 as someone thats watched every episode and still watches as soon as they air, it seems like the sausages that burst either have too much liquid OR they get stuck to the pan. See what happens is they leak out lots of sugars and other stuff that caramelizes and since you like to daintily cook, the sausage juices are allowed to act as glue to the sausage case. You gotta stir that sausage more bro, gotta make sure its oil inbetween it and the pan, not fililng juices.

When I cook problem sausages that wanna burst or burn on the outside, I switch from a sear to a steaming method halfway through. Get a little brown on that skin, then toss 1cm of water in the pan and cover with a lid. You could use a glass top lid for viewing purposes. Cooking it this way the skin won't be as crisp, but if you take the lid off once it's finished cooking internally you might be able to get the water to evaporate and then finish the sear the rest of the way. You could also use a steamer pot followed by a pan sear, but that's gonna dirty more dishes to get the same effect.

Pepper can have it's place in sweets. It's all dependent on what you do with it though. Pepper lolipops and hard candies are more common ways of using it. But I must admit I'm not sure about this application. Seems harmless, idk

Different types of peppers have different flavor profiles. (Black, red, white, green, etc). So it would be worth experimenting with sweets to see what would work best!

Maybe going another direction would be good for a reregrind, like shaping the cookie dough into a bun and baking it and then just plopping down a regular sausage on there? Or partially baking in the oven before grinding it up with or without meat then sausaging the thing
