Ingredients:-
1 medium aubergine
2 medium potatoes
1 medium onion sliced / chopped
1 tomato chopped
2 small green chilli finely chopped
Thyme
Curry leaves
5 tbs cooking oil
1 tsp ginger paste
1 tsp garlic paste
1/2 tsp chilli powder
1/4 tsp cumin powder
1/4 tsp corriander powder
1 cup of boiling water
1/2 cup cold water
Description :-
Cut & sprinkle salt on aubergine leave 10 mins to rest to remove the bitterness of the aubergine, then wash & drain, start your cooking refer to the video please. Mauritian way of cooking sautee aubergine ( toufer brinzel) is just plain but I added some spice to make it more appetising & tasty.
